Wrapping up the week for me is one of my favorite blogs. It was actually one of the first blogs I started reading before I jumped right into this food blog life. Michelle is a super funny writer and her food will seriously make you drool all over your computer, that is if you aren’t too busy laughing. Not that that happened to me…Here is Michelle with a drool-worthy recipe!
Hi, my name is Michelle and I’m the voice over at Confessions of a Recipe Junkie. I am so honored to be guest posting on Stefanie’s blog Sarcastic Cooking. I remember meeting Stefanie over a year ago, when I first started blogging. We have yet to meet in person but it’s been a blast chatting over The Twitter. This weekend I wanted to move from our house. It’s been 5 months since we moved here and it’s been great. The dogs have a yard, I finally started a little garden, we have a grill, and my flowers are growing. I had hung up a bird feeder and every morning I would walk out side and take in the fresh air. This weekend, my perfect vision came crumbling down…more like slithered away. We have a garden snake!!! I hate snakes, really really dislike them. I can’t see them on TV, a photo, and even a toy snake is not welcomed in my world.
So, this Sunday in my just woke up dazed, I met it. I let the dogs out for their morning stroll, stepped outside right by the door and stood in amazement. Taking in the fresh air, looking up to the sky “oh so pretty” and then I heard it. That noise of something afraid, moving away. I looked down and my heart dropped. All I remember was my scream, half frozen, just watching the tail end uncoil and then running into the house to see it slither away past my tomatoes. MY TOMATOES!! NOOOOO!!!! I don’t know how I didn’t faint. I called the dogs in and screamed for Alex. It took me all morning to recover. I did not have the appetite for breakfast until lunch time and even then I wanted something light and refreshing. I really wanted to get away to some island. This is how this parfait was born. It hit the spot. A little mental vacation from my adrenaline rush. The snake is still somewhere in the yard. I made Alex stand with me as we watered the tomatoes last night. I have yet to take a step outside alone. Every time I let the dogs out I look at the spot it was at.
We now have a call in to pest control, and a landscaping company. This city slicker is praying there’s some magic spray they can put to get rid of it. Also, asking for a miracle that it won’t mess up my tomato plants, tall order. To think on Saturday I was happy away raking all the dead leaves that have fallen from the tall tree in our yard. Raking in flip flops. Four piles now sit in our yard. It’s probably hiding in there. FAINT.
I need this parfait, again. STAT.
Peach & Honey Parfait (Enough for 2 small parfaits)
2 ripe peaches- room temperature
1/4 tsp brown sugar
3tbs sliced almonds
3tbs dried currants (cranberries or raisins will do)
1/4 cup of honey
plain greek yogurt (about 1/2 cup)
In a microwave safe measuring cup, measure out the honey. Heat in the microwave for 10 seconds. Add in the almonds and currants, mix until combined. Cut up your peaches into small pieces, mix in the brown sugar. Grab your serving cups, scoop in some peaches, follow with greek yogurt, honey/almond mixture, yogurt, peaches, yogurt, and top with honey/almond mixture.
