Traditional Home Fries

What is a brunch staple? Every single person answers that question differently. For some it is eggs, for others it is pancakes or a nice cocktail. For me, brunch would not be brunch without some crispy hash browns or golden home fries. I need those carbs.

Home fries are great for sopping up that extra runny yolk. They are also great if, let’s say, you had an amazing time the night before and are now paying the consequences. Not sayin’, but I’m just sayin’.

Here is probably a dose of too much information for you all…

When I had made these to my crispiness liking, I took my pictures for the blog. Then, I sat there and ate almost half the bowl using my fingers as utensils. I just kept telling myself, “Oooo that was a good bite, just one more.”

These home fries are that good. They are “sit on the floor, eat without silverware, and worth trying to justify your craziness to your judgmental pug” GOOD!

Traditional Home Fries

Cook Time 20 minutes

Ingredients

  • 5 Large Potatoes peeled and cut into ½ inch pieces
  • Salt
  • 2 Tablespoons Canola Oil
  • 2 Tablespoons Unsalted Butter
  • Freshly Ground Black Pepper

Instructions

  1. Add the cut potatoes to a medium pot, cover with water, add a little bit of salt, and bring to a boil over medium/high heat. Boil potatoes until just about fork tender, seven minutes.
  2. Drain potatoes. Add potatoes to a few paper towels or a kitchen towel and pat dry. Let them slightly cool for a few minutes. Make sure to give the potatoes enough room so they do not keep cooking.
  3. Add the canola oil and one tablespoon of butter to a large nonstick skillet. Heat over medium/high heat until the butter melts and stops foaming.
  4. Add the potatoes to the pan. Turn the heat up just a bit. Toss the potatoes using a wooden spoon or rubber spatula until they are all coated with the oil/butter mixture. Continue to cook the potatoes for about ten minutes, turning every few minutes until golden on all sides.
  5. Season the potatoes with salt and pepper. Using the spoon/spatula or a potato masher, roughly mash the potatoes. You still want to be able to see some of their individual shapes. Add small dots of the remaining tablespoon of butter to the tops of the potatoes.
  6. Cover the pan with a lid. Cook for four to five more minutes until the bottom is deeply golden and crusty.
  7. Add the potatoes to a serving dish and eat right away!

    Home fries are one of my favorite parts about brunch! I never can seem to get them quite crispy enough–I think I get too impatient and crowd them in the pan. Yours look lovely!
