Roasted Coconut Curry Butternit Cauliflower Mash

Ladies, do you ever have those moments where you float up out of your bodies and look down at yourself and question, “Why am I mothering my husband?” Husband, boyfriend, significant other, what have you. But, does this ever happen to you?

I do not want to be like that, but more often than not I find myself having to remind myself, “Mike already has a mom.” Gosh, I even annoy myself with this sometimes.

I have noticed this especially when we are eating dinner. I criticize him leaving behind vegetables on his plate or eating way too fast. I do not know why I do this.

BUTTERNUT and Cauliflower

My mom never did that to me or my brothers growing up. She was never one of those moms that made you sit at the table until you finished all your vegetables, or, God forbid, one of those moms that wouldn’t let you have dessert if you didn’t have a clean plate. So, I do not know where this side of me comes from.

I am especially worried, because with a kid on the way, I do not want to be one of those moms. I mean, of course I care that he tries new things, has an open mind, and eats enough to be full and nourished. I need to chill and first stop nagging Mike and then I think when I actually have a child (that eats real human food) to take care of, hopefully the rest will just come naturally and I won’t be a crazy vegetable nazi.

Roasted Coconut Curry Butternut and Cauliflower Mash

When I made this mash, I knew it was a losing battle before I even gave it to Mike. And I was OK with that. I knew that this recipe was really for my readers looking for something healthy and different to serve at the holidays. I was just happy when he tried a spoonful. I guess I need to relax and learn when to pick my battles.

Plus, I don’t know why I criticize him leaving behind tomatoes, for example. I love tomatoes and am glad to dispose of them right into my mouth!

Roasted Coconut Curry Butternut and Cauliflower Mash

A healthy alternative side dish to traditional mashed potatoes.
Prep Time 10 minutes
Cook Time 30 minutes
Total Time 40 minutes

Ingredients

  • 4-5 Cups Cubed Butternut Squash
  • 1 Head Cauliflower stem removed and chopped
  • ½ Cup Olive Oil
  • ½ Tablespoon Curry Powder
  • 1 Teaspoon Salt
  • ½ Teaspoon Black Pepper
  • 1 Tablespoon Coconut Oil
  • ¾ Cup Coconut Milk/Almond Milk

Instructions

  1. Preheat the oven to 400 degrees F.
  2. Add the vegetables to a large bowl. Season with curry, salt, pepper, and olive oil. Toss to combine. Spread the vegetables on a large baking sheet in one even layer.
  3. Roast for 30 minutes. Remove after 15 minutes to toss the vegetables and then return to the oven.
  4. Once the vegetables are roasted and tender, add them to a large saucepan. Add the coconut oil and coconut milk to the pot. Heat the pot over low. Use a potato masher to mash the cauliflower and butternut squash until the desired consistency. Cover with a lid and keep over a low flame until ready to serve.

    Just to let you girls know, I am a man and I have just cooked this for my wife having stumbled across it whilst looking for inspiration to use up a squash and cauliflower. My wife now feels totally mothered. Great recipe by the way!

    I am glad I’m not alone! Pretty much anything I make gets salsa or chile sauce on top. I probably wouldn’t care as much if he tasted it first. If I was a chef at a fine dining restaurant and someone did that, I’d be furious!

    We definitely have been on the same wave length lately. I just love the curry and coconut mixed with butternut squash–such a great combo. The cauliflower is a great idea too.

    Well you see, we have the opposite problem in my house. Braden eats it all but he likes to season to his taste which drives me crazy. That means hot sauce and pepper on almost everything, before he tastes what I cooked. I constantly yell, can you at least try it first and see what it’s supposed to taste like before you douse it with pepper? I don’t know which is worse.

    Wish I knew. It will only get worse (for Mike, anyway). Why does it bug me when I serve something and Jerry pours a jar of salsa on top (which only irritates his stomach)? If you figure out the answer, let me know. Although, I will say that I never really did this to Stephie (I don’t think I did, anyway). So, it might just be Mike that will get fussed at, and he can take it. 🙂

      His response to my post was, “You don’t mother me… too much.” I just wish these guys would eat things we give them as is. Right?!?!?!

        I just remind myself that Alex not touching the (insert fruit or vegetable here) means more for me. I suppose that’s what multivitamins are for…not that I could probably convince him to take those either! 😛

        PS, cauliflower and butternut squash – what a smart combo! Little starchy, lots of vitamins, all good!
