Yeah, it is a Monday. Yeah, it is kind of gloomy here in Chicago. Yeah, the weekend is over and maaaaaybe that would have been a better time to share this recipe with you.

But, in my book, there is no better time for a good drink than a Monday. I hope you agree.

Pimm’s. What is that? I didn’t really know at first either. I just knew it was delicious and kind of fancy. I did a little Wiki based research and basically it is a fruity and herby liquor. It is light and perfect for any summer drinking occasion. A traditional Pimm’s Cup is Pimm’s mixed with lemonade and fruit, sliced cucumber, and fresh mint. Because of the slices of cucumber traditionally served in a Pimm’s Cup, it was only natural to add a little more of a kick with Rain Organic Cucumber Vodka.

Do you know that one time I was watching Weeds and I was so thrilled to see Nancy Botwin walking around drinking Rain vodka? I was like, “I know that brand! I work with them!” It doesn’t take much to excite me people.

Ok, so I couldn’t stop at two liquors. I had to use a ginger beer with alcohol in it. I have created the Long Island Ice Tea version of a Pimm’s Cup. You are welcome.

This recipe is part of #TheBacheloretteParty series Stephie and I are running. It would be great for a girls night in, chilling and watching the Bachelorette. You are doing that already AND joining us on twitter during the show, right? So, might as well have a great cocktail at the same time!

Cucumber Ginger Pimm’s Cup

Ingredients

  • Fresh Mint
  • Ice
  • 1 Ounce Pimm's No. 1
  • 1.5 Ounces Rain Organic Cucumber Vodka
  • 6 Ounces Ginger Beer alcoholic or non
  • Sliced Cucumber
  • Sliced Lemon
  • Strawberries

Instructions

  1. Add a few mint leaves to the bottom of a tall glass. Slightly muddle the mint.
  2. Add three or four ice cubes.
  3. Pour Rain and Pimm's over the ice and mint. Top with ginger beer. Stir.
  4. Garnish with fresh mint, lemon slices, cucumber slices, and a strawberry or two.

    I’ve never had a Pimm’s but I love the idea of a cucumber-based drink! Perfectly refreshing for summer’s heat!

      Yes, you *must* try them! And hooray to Stef for brewing one of these up. A good buddy and I always wondered how to make them without spending $9 or so at a local fancypants bar.

    Are you kidding me? This drink looks perfect for a Monday! Especially in summertime you can drink all week, especially as the world cup is on. And in wintertime, it’s just to cold, so you can …..
