Well it is October. You know what that means? All things pumpkin are now totally acceptable in my book. That is why, to kick off this month, I have a super easy pumpkin filled recipe that takes no time at all to mix together. I always hate jumping the pumpkin gun in September when summer fruits and veggies are still on the grocery store shelves.

And now that pumpkin is all out in the open, we can deal with my next seasonal dilemma, Halloween. This will be the third year of life of this little old blog here and for three whole years I have been proclaiming from the rooftops my disdain and bad luck with the holiday of Halloween.

My struggle with this day now is that I have a baby. A baby that will most likely grow up to be a kid that digs dressing up and getting scared and going door to door for candy. Am I going to be the Grinch of Halloween and not do any kind of decorating? Am I just going to roll my eyes when he wants to go costume shopping? Or God forbid, what if he is one of those bad kids that silly strings defenseless girls or eggs houses on Halloween?

Agh! My level of anxiety is rising thinking of the future.

Luckily, he is only 9, almost 10 months old so I can still dictate his and my level of involvement in this dumb ass holiday. For now, we will be eating healthy Halloween/pumpkin flavored snacks like these and answering the door in costume (him not me) for the neighborhood hoodlums.

If by next year I am full-on Halloween-obsessed mom planning her trick or treat route through the neighborhood and doing a whole post about Andy’s trick or treating experience, shoot me.

Pumpkin Brown Butter Brown Rice Crispy Treats

Tis the season for gooey marshmallow and spicy pumpkin bars made with brown butter and brown rice crisp cereal.
Prep Time 30 minutes
Cook Time 15 minutes
Total Time 45 minutes
Servings 9 Bars

Ingredients

  • 5 Tablespoons Unsalted Butter
  • 10 Ounces Mini Marshmallows
  • 1/3 Cup Pumpkin Puree
  • ½ Teaspoon Cinnamon
  • ¼ Teaspoon Nutmeg
  • 8 Cups Brown Rice Crisp Cereal

Instructions

  1. Butter an 8x8-inch baking dish and set off to the side for later.
  2. Add butter to a large skillet and heat over medium heat. The butter will melt and crackle. Once the crackling stops, stir occasionally, and keep an eye out for a light brown color. Once the butter is brown, reduce the heat to low.
  3. Add the marshmallows, puree, cinnamon, and nutmeg. Stir to combine until all the marshmallows are melted.
  4. Pour the brown rice cereal into a large mixing bowl. Pour the marshmallow mixture over the cereal and mix until all the bits are coated. Scoop the mixture into the greased pan, top with pepitas and salted caramel for a little flair. Place in the refrigerator for at least 30 minutes before cutting.

    Yum! These need to get into rotation right away. Enjoy dressing them the way you want to right now. Small one has very particular ideas at this point. Luckily we’ve fed her enough science fiction by now she’s picked Princess Lea as ‘her girl’.

    Haha I am not super into Halloween either, but I suspect that with a child it will actually be more fun! At least until he learns how to talk and demands all the candy. 😛

    You should probably move to switzerland because there is no sight of Halloween here! But I do miss it and look forward to celebrating again when I move back to the states. These rice crispy treats look amazing. I haven’t had one in a while and this variation sounds like something I need!

    I’m not big on Halloween either. It’s so much money and effort for one day. It just seems like a waste. Sure, I’ll eat Halloween goodies, but that’s as far as it goes. Love these bars!

      You are so right about the money and the effort. And people never ever know what my costume is supposed to be soooo I skip the costume part all together.
