Fresh Mint and Dark Chocolate Cookies | Sarcastic Cooking

It’s no secret I run a food blog and take care of Andy for a living. In order to have both of these jobs working cohesively, I have to do a bit of juggling. This means cooking while Andy is napping, corralled in the highchair, or under the care and supervision of another person.

The day when I was feeling a bit brave and Andy was feeling a bit clingy was when I decided to try and prep, bake, and photograph these cookies. I knew it would be crazy and probably take twice as long to bake, but I went for it anyway. With the holidays around the corner, I wanted to get as many recipes done in advance so I could actually spend time away from the kitchen when Mike is off from work and we have a bit of family time.

It started out so cute. Andy played the pots and pans drums while I gathered ingredients. He likes the sound of the stand mixer so he wanted to see what was happening in the bowl. He watched the butter get creamed and made oohing and ahhing sounds while the dough came together.

I used his hand to flatten down cookies and then chilled them during his nap time. Sigh of relief and Gilmore Girl marathon for mom while baby sleeps.

But when Andy was back awake and feeling refreshed is when things started getting tricky. I had to preheat the oven and then bake the cookies. Let’s call this the “sit Andy in front of the TV with Sesame Street playing and a sippy cup in his hand while I sprint back and forth placing each sheet of cookies in the hot oven.” Any time he heard the oven door open he would come sprint-crawling down the hallway into the kitchen. I put the oven light on so he could see in the oven and watch the cookies. In reality it didn’t attract him as much as I would like, most likely due to the fact that I haven’t cleaned the oven since I don’t know when. Ooops. Add it to my to-do list.

Then it was time to photograph. I normally shoot things on or very close to the floor. With a crawling baby you can see how this would be problematic. This totally spontaneous, perfectly timed photo should display why this is soooo problematic.

Well that photo and the moment with Andy eating the warm cookie and enjoying the heck out of it was very short lived. Andy got dark chocolate everywhere. All over his face, clothes, hands, the floor, and even poor Weezer. Well, maybe I shouldn’t say “poor Weezer” because he was licking the chocolate off Andy’s face and, despite my best efforts, accepting pieces of cookies from my little filthy child. As I tried to clean Andy’s hands, he was trying to crawl away, therefore smearing warm melty chocolate all over my kitchen floor.

Yeah, the one cute picture turned into about an hour of cleanup and waiting for Andy and Weezer’s sugar rushes to subside.

Moral of the story, baking and babies don’t mix. Or maybe it was worth it for the memory.

Meh, just make these cookies!

 

Fresh Mint and Dark Chocolate Chunk Cookies

Cookies filled with decadent chunks of dark chocolate and hints of fresh sweet mint.
Prep Time 1 hour 10 minutes
Cook Time 15 minutes
Total Time 1 hour 25 minutes
Servings 16 - 20 cookies

Ingredients

  • 1 ¾ Cups All Purpose Flour
  • ½ Teaspoon Baking Soda
  • ¾ Teaspoon Baking Powder
  • ¼ Teaspoon Salt
  • ½ Cup Plus 2 Tablespoons Unsalted Butter at room temperature
  • ½ Cup Plus 1 Tablespoon Granulated Sugar
  • ½ Cup Plus 2 Tablespoons Brown Sugar
  • 1 Large Egg
  • 1 Teaspoon Vanilla Extract
  • ¼ Cup Fresh Mint Leaves chopped
  • 1 ½ Cups Dark Chocolate Chunks

Instructions

  1. Sift the flour, baking soda, baking powder, and salt together into a large mixing bowl. Set off to the side.
  2. Add the butter and sugars to the bowl of an electric stand mixer fitted with the paddle attachment. Cream together until light and fluffy. Add the egg and vanilla extract, mix until combined.
  3. Add the dry ingredients to the mixer bowl. Mix on low until just about combined. Add in the mint and chocolate and mix until combined and no more flour is visible.
  4. Scoop out about 3 tablespoon balls of dough on to a large baking sheet lined with parchment paper. Gently press down on the top of each dough ball to slightly flatten. Once all the dough is portioned out, chill the baking sheet in the fridge for at least an hour.
  5. Preheat the oven to 350 degrees F.
  6. Arrange about six cookies on a parchment lined baking sheet and bake for 15 minutes. Let the cookies cool for 10 minutes on the pan and then transfer to a wire rack to completely cool.

    Hi, I was wondering instead of butter can I use vegetable or coconut oil instead? I barely have any butter left and still want to make the amount of cookies the recipe calls for!

      Hmmm not too sure on this… I have only ever made these with butter so I do not know how the results would turn out.

    That photo is perfect! Also admit it, as frustrated as you were cleaning up, you loved it too. Also I still can’t believe you photograph close to the ground with Weezer around. I’d have Sir Pugsley in all my photos if I attempted that! No food, just pug! Love that you used fresh mint in these cookies.

      I am a good blogging Rebel hahahha now that Andy is mobile unless something really peaks his interest Weezer stays away from where Andy is. Don’t worry there is still plenty of his hair around hahah

    Oh my gosh, I love little baby Andy’s hand in the cookie photo! That is just too precious! I’d say you should do Andy action shots more often, but I’d shudder to think about the cleanup, haha! So, so cute…so much chocolate…ugh, now you’re making me wish I were licking melted chocolate off my hands/clothes/face/walls/whatever-I’ll-lick-it!

    These cookies look so delicious and unique! I absolutely love the idea of putting legit mint in cookies. Serious brilliance right there!!

      Weeze has been around for seven years now. I’m sure the amount of chocolate he ate isn’t the worst thing he has ever consumed hahaha

    That picture is priceless. Totally worth the cleanup (this coming from someone that didn’t have to actually do the cleanup!) and these cookies look delish! I love mint and chocolate, but never have tried fresh mint in baking. Worth a shot!

      You have to try fresh mint! It’s so sweet you’ll love it! Yeah the cleanup wasn’t thaaaaaat bad. I was maybe being a bit dramatic hahah
