Happy one month of meals-iversary people! I can honestly say, not only has this been a hit with you the readers, it has helped me not to eat out as often and cook dinner every night since I started. You are saving me money, guys! I will tell you, this past week was rough. Mike is a teacher and is also coaching baseball and has been gone from 6am to 10pm almost every single night. So that means it is me and two under three-years-old home alone all day.
When dinner rolls around, I really don’t feel inspired or have the energy to do much. That is why you will see a big batch soup recipe on this week’s agenda along with a frozen chicken nugget and tater tot night. I am human, after all.
Here we go!
Monday: Mexican Chicken Noodle Soup (I highly recommend using a different noodle that is easier to spoon into your face. I will also tell you that this soup kicked my sore throat right in the butt!)
Tuesday: Soryizo Hash Tacos (Feel free to use real chorizo if you don’t have access to a Trader Joe’s or I have a recipe for homemade soyrizo here.)
Wednesday: Lazy Turkey Cabbage Rolls
Thursday: Frozen Chicken nuggets and Tater Tots plus a side Greek Salad for Mom
Friday: Cheese Pizza on this crust (BTW Did I mention it is pizza month? Stay tuned for some good recipes next week!)
