Burger and Fry Roll-Ups

May 16, 2017

Ah yes, from one giveaway to the next! All month long is National Burger Month. Now that Brunch Week is over, we can give burgers the ever-loving attention they so rightly deserve. I have to say, taking a lot of cheese and dairy out of my diet has affected a lot of things. One thing it really hasn’t affected is burgers. If you have a good burger, it will be a good burger, with or without cheese. Now, you may argue the point, but i stand by my bold statement.

This recipe was originally my Mom’s and my Dziadzia’s (jah-jah, Polish for Grandpa). The original recipe is called a beef roll-up. It has thinly sliced meat wrapped around a slice of bacon, sliver of pickle, sliver of onion, and 1 french fry. And since I bastardize everything they ever make, I had to make some changes. I am going to say this is Mike’s fault though, not mine. He is the one that doesn’t like pickles or onions. How dare he, right?

I wanted to pump this burger roll full of fries. I love fries. No shame in admitting that.

Some have cheese, some don’t. Some have pickles, some don’t. The go-to burger seasoning totally makes these guys. I will leave the stuffing to you!

Now, down to some burger biz! Each week this month there is a different prize to be won from entering HERE.

Prep Time 15 minutes
Cook Time 10 minutes
Total Time 25 minutes
Servings 6 -9 Roll-Ups

Ingredients

Seasoning:

  • 1 Teaspoon Fresh Cracked Black Pepper
  • 1 Tablespoon Sea Salt
  • 1/2 Teaspoon Smoked Paprika
  • 1/2 Teaspoon Dried Minced Garlic
  • 1/2 Teaspoon Dried minced Onion
  • Pinch of Crushed Red Pepper Flakes

For the Roll-Ups:

  • 1 LB Black Angus Top Round Steak Full Cut
  • 9 Kosher Dill Pickle Spears
  • 5 Slices of Cheddar Cheese
  • a Handful of Cooked French Fries

Dipping Sauce:

  • 2 Tablespoons Mayonnaise
  • 1 Tablespoon Ketchup
  • 1 Teaspoon Yellow mustard

Instructions

  1. First, combine all the dry seasonings in a small bowl and mix to combine.
  2. Cut each slice of steak into 3 to 4 inch wide slices. Season each slice with a 1/2 teaspoon of seasoning mix. Place each slice between two pieces of plastic wrap. pound the meat very thin using a rolling pin or meat tenderizer.
  3. Now time to stuff and roll. Place a half slice of cheese on top of the center of the slice of beef. Near one corner place a few french fries and a pickle spear. Roll from that corner to the opposite end. Continue until all the roll-ups are rolled. Season with a pinch more of the seasoning blend.
  4. Roll-ups can either be grilled or broiled.
  5. With your grill on medium/high heat, place the roll-ups seam side down and grill for 4 minutes on one side and then flip and cook for 3 minutes on the other side.
  6. To cook under the broiler, heat a large cast iron skillet for 5 minutes under high heat. Carefully remove from oven. Place roll-ups on the hot skillet and return to the broiler for 7 minutes until cooked through and slightly crisp and golden.
  7. Let the roll-ups cool for two minutes before slicing into them. While they cool, make the dipping sauce. Mix the mayo, ketchup, and mustard in a small bowl.
  8. Use a fork and knife to cut the roll-ups and dip the bites into the sauce.
