What’s for dinner? Crispy Fish Tacos with Southwest Ranch Slaw

What's for dinner? Crispy Fish Tacos with Southwest Ranch Slaw (20 minute meal!) - Sarcastic Cooking

If you wanted a real life glimpse into my weekly dinner repertoire, this dish is it! I seriously set this picture up, took the photo on this box, then moved the plates from the box to the table, and then moved the tacos from the plate to my face. That is real life, folks.

So many times growing up, we lived off fish sticks on those Lenten Fridays. When I tell Mike that we are having fish sticks for dinner, he groans. I even tried to give Andy a fish stick all slathered up in beautiful tartar sauce. I thought I was smarter than him because he loves any kind of sauce or sour cream or yogurt on anything. Alas, the kid took a bite of the fish stick, ate the breading off, and then spit out the fish. [Read more…]

I am at a loss here. This weather is crushing my soul. In the short span of a day, it went from a balmy 70 degrees to a chilly 30 degrees. That means Andy, Weezer, and I were pretty much outside for an entire day and then back to shut ins the next. Despite the first version being a little soupy, it was still good. Not my Mom’s version good, but good none the less. [Read more…]

Red Enchilada Stacks with Spicy Roasted Mushrooms | Sarcastic Cooking

Having this blogging job means that I am my own boss, which is both awesome and daunting. I can give myself any days off I see fit, yet on the other hand, I have to get myself back to work. Sometimes, my laziness and the ease at which I get wrapped up in my own personal life/drama make me fall off the face of the blogging world.

I wish that I was one of those people who, when the you-know-what hits the fan, immerses themselves in their work and get after their goals even harder to keep their mind off of whatever is bothering them. I sadly am not that person. I am a worrier and a wallower. [Read more…]
