Summer Crock Pot Dinners

I don’t mean to come off sounding like my 70 year old, 4’ 10” tall Grandma, aka Midge, constantly complaining about the weather, but man is it hot! Normally, I can stay confined in my air conditioned house and not care about the weather.
However, yesterday while venturing out to meet a friend at an outdoor mall, the weather started to interfere in my much needed retail therapy. Now, we gots a problem, weather!
This weather, as I have said before, makes me not want to cook. It makes it pointless to wear makeup because it just sweats off your face. Another downside to the weather for those of us bespectacled individuals, is that, along with makeup, glasses go sliding down my nose at the slightest increase in heat.
So, in another heat inspired recipe post, I come to you with some non-heat inducing, minimal prep, slow cooker meals.
Try some Shredded Pot Roast Sandwiches. The crock pot does most of the work. All you have to do is shred the beef and buy some bread. You can even eat the leftovers for lunch the next day!
Any time I make Buffalo anything my mister goes bananas, so if your house is the same, try some Pulled Buffalo Chicken. Once again, all you have to do is put the chicken on the bun and dinner is served!
Finally, my last suggestion is my Adobo Pork. I love to make this spicy pork and serve it on some warm tortillas with a few slices of jalapeno and some smashed avocado.
I think I have given you a few great ideas for a hot amazing dinner while keeping that kitchen at a nice cool temperature.
Maybe finish off the night with a nice cocktail like Moscow Mule, and a leisurely lay under a billowing fan.
