When Stefanie wrote and asked if I would be willing to guest post for her while she is out of town, I practically squealed loud enough to wake the neighbors. Stefanie is the type of blogger we all aspire to be…beautiful photographs, amazing and unique recipes, with a true love for food. Stef and I settled on dessert for my post here in her kitchen, and I knew just which recipe I’d be sharing.

These Peanut Butter Cookie Cups are a throw-back to my childhood. I’d stumbled across the recipe on Little Bits of… and was immediately transported back to my younger years.

My father used to travel a lot. When he returned home, his “present” for us was peanut butter cookie cups filled with chocolate frosting that he’d picked up from a cookie shop in the mall. I know, right? A mall cookie. But, they are SO good. Once I saw this recipe, I knew I’d be making it. I knew I’d love it. And boy, was I ever right.

The taste from these is EXACTLY what I remember from when I was a child. And the amazing chocolate buttercream that these cookie cups are filled with is just the icing (heh) on the cake (cookie???).

These are easy to assemble. You could even use a prepared chocolate frosting as a substitute for the homemade buttercream if you’d like.

These cookies truly are one of those foods that transport me straight back to when I was a kid…when times were simpler…when your dad bringing you a cookie meant everything in the world.

 

Peanut Butter Cookie Cups with Chocolate Buttercream Filling

Ingredients

For the Cookies

  • 1 1/4 cups flour
  • 3/4 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1/4 tsp. salt
  • 1/2 cup unsalted butter, softened
  • 1 cup creamy peanut butter
  • 1/2 cup sugar
  • 3/4 cup brown sugar
  • 1 large egg + 1 egg yolk
  • 1 Tbs. milk
  • 1 tsp. vanilla

For the Chocolate Buttercream

  • 1/2 cup unsalted butter, softened
  • 1/2 tsp. vanilla
  • 2 1/2 cups powdered sugar
  • 1/2 cup cocoa powder
  • 2-3 Tbs. milk
  • 2 Tbs. corn syrup

Instructions

For the Cookie Cups

Preheat oven to 350 and lightly grease a muffin tin.

In a large bowl, combine the flour, baking soda, baking powder, and salt and set aside.

In the bowl of a stand mixer (you can also use a hand mixer), cream the butter and peanut butter together until it is fluffy. Add the sugars and cream the mixture until it is well-mixed. Add the eggs and mix well. Add the milk and vanilla and beat until well-combined.

Add the flour mixture in 2 stages, ensuring that the ingredients are thoroughly mixed.

Spoon the cookie mixture into the prepared muffin cups of the muffin tin, filling each tin 1/2 full. (I was able to make 18 cookie cups.)

Bake for 13-16 minutes, or until the edges of the cookie cups turn light brown in color. Remove from the oven and press down the centers of the cookie cups to leave a spot to fill (I used the end of a wooden spoon).

Allow the cookies to cool for 10 minutes. Run a knife around the edges of the cookie cups to free them from the muffin tin before removing them and setting them aside to await the filling.

For the Chocolate Buttercream

In the bowl of a stand mixer (you can also use a hand mixer), beat the butter and vanilla until it is well-creamed. Add the powdered sugar and cocoa powder in 2-3 stages, mixing well between each addition, and mixing until ingredients are well-combined.

Add the corn syrup and again mix well. Slowly add the milk, adding only enough to achieve your desired consistency.

Pipe or fill the cooled cookie cups with the buttercream and serve.

Aren’t these cute? And they are SO easy to make!
