Ok. So from that title you may be a little like, “Whaaaa?!?!” And I have to kind of agree with you. This recipe was the mastermind of my younger brother Nick. This was created one morning circa the year I learned to cook grilled cheese on my own. Most of the foods us kids thought were amazing (like liver sausage and mayo sandwiches or pickles and sour cream sandwiches) are definitely an acquired taste.
But, potatoes and eggs seem a little bit more logical. I mean, you do eat hash browns with breakfast, right?
My brother is probably a little miffed that I am sharing his trademark specialty with you all. Seriously. When I shared a picture of this standard breakfast on Instagram a while ago, I got a call from my youngest brother saying, “Why are you sharing that on social media? Nick is going to be mad.” I am 100% serious. That was an actual phone conversation. My little brother doesn’t call me very often. He is more of a texter, so a phone call means it is serious.
My brothers and I always talk about restaurant ideas. One drunken evening we thought chips on sandwiches was a great idea for a restaurant. We should have trademarked that crap, because Subway is aaaaallll about Fritos on subs. One night we talk about opening a food truck and then the next day it is a catering company. The only restaurant venture that has always stuck around through the years is Nick’s idea for a French fries and eggs breakfast all day kinda joint.
We randomly text each other pictures of our new takes on this classic; chorizo FF & E, hot dogs FF & E, Mexican FF & E, Greek FF &E….. The list goes on. But seriously, this is our million dollar take it to shark tank idea. DON’T STEAL IT. Please?
My brothers will be sooooo pissed.
Hmm… Maybe we should trademark this, I would hate to have what happened with Subway happen with this idea.
French Fries and Eggs
Ingredients
- 12 Ounces Frozen French Fries about ¼ of a 2LB bag
- 1 Tablespoon Olive Oil/Butter
- 3 Large Eggs
- ¼ Cup Milk
- Salt and Pepper to taste
- Suggested Toppings: Salsa Avocado, Hot Sauce, Ketchup, Guacamole, Giardiniera, etc.
- Suggested Add Ins: Bacon Hot Dogs, Chorizo, Sausage, Gyro Meat, Ham, Cheese, etc.
Instructions

Preheat the oven to 400 degrees F.

Add French fries to baking sheet and bake for 10-15 minutes, until slightly golden and crisp. Remove from oven and set off to the side.

Mix together eggs, milk, salt, and pepper.

Heat olive oil in a medium non-stick skillet over medium heat for a minute, until hot. Add French fries and give a quick toss. Pour in egg mixture and, using a rubber spatula, stir to evenly coat all the French fries. Cook while flipping/stirring occasionally for about 5-7 minutes until cooked through.

Top with any of the above toppings or anything else you would like. If you are adding in meats, cook them before you add the French fries. If you are adding in cheese, add it after the eggs are semi-cooked.

My spouse an I get it every time we go back (he’s from Argentina) and specifically from Beto’s.

My bros and I discuss food too but we really get at it around Chanukah when the different latke recipes come out. One year one bro did mac and cheese latkes. Let’s just say it was heavy.
