Greek Caesar Wedge Salad - Sarcastic CookingLay it on me people. Three hour car trip with a 7 month old and a two and a half year old. How is this going to go? What do I need to bring? DVDs? New toys? Benadryl? Lots and lots of Benadryl. Just kidding on the last one. But it all seriousness, any tips you have would be greatly appreciated. We are embarking on our annual family vacation to the Wisconsin Dells. A week of swimming, sun, adventures, laughing with family and, of course, cheese. I mean it is Wisconsin.

We are hitting the road for five nights to the Wilderness on the Lake in Wisconsin Dells. It is a nice hotel because, like the name says, it is on the lake and separate from all the hulabaloo of the water parks. I think my kiddos are still too young for water park shenanigans so we like to stay put. Plus, Andy is still in this annoying phase of just wanting to run, so being in a concrete decked water park with no shade and running after him all day is like the last thing I want to do. Oh, and I say a “phase” because I do hope one day the kid will slow the heck down.

We look forward to this trip every year. However, with the impending swimsuit wearing I have to do, I have even been curbing the weekday glasses of wine and trying to cut out fast food to prepare for the caloric intake that will come with this trip. Mars Cheese Castle, anybody? I mean come on!

Greek Caesar Wedge Salad | Sarcastic Cooking

 

This salad has been my weekday go to. You just chop up a bunch of the veggies ahead of time and store them in separate small containers in the fridge. Buy some romaine lettuce or iceberg and cut it into fourths. Top each little wedge with a little bit of your fave caesar dressing mixed with lemon juice and olive oil. Sprinkle on some veggies and feta. A good grind of black pepper and then boom! Salad in a jiff.

PS I just thought that if you wanted some extra protein you could toss on a little rotisserie chicken. Mmm. Next time!

I was just complaining about how it seriously takes like 20 minutes to make a salad. Why is eating healthy so labor intensive? I cut out the time it takes to make this salad by doing all the chopping ahead of time, like I said earlier. Then when you only have 30 minutes in your day to do all the things, feed yourself, and refuel on coffee, you don’t squander all that time prepping a dang salad.

So while you eat this salad or prep this salad, I will be running around packing us up and scouring Pinterest for pins that deal with traveling with toddlers.

Greek Caesar Wedge Salad

A simple summer wedge salad that combines all you love about Caesar salad with a tradition Greek salad.

Total Time 12 minutes
Servings 2 Wedges

Ingredients

For the Dressing:

  • 2 Tablespoons Caesar Salad Dressing I use a low-cal one.
  • 1 Teaspoon Olive Oil
  • 1 Teaspoon Fresh Squeezed Lemon Juice
  • Fresh Ground Black Pepper

For the Salad:

  • 1/2 Head of Romaine of Iceberg Lettuce cut in half and core removed
  • 1/2 Cup Diced English Cucumber
  • 1/2 Cup Diced and Seeded Tomato
  • 1 Tablespoon Chopped Peperoncino Peppers
  • 1/4 Cup Diced Kalamata Olives
  • 1 Tablespoon Diced Red Onion
  • 1 Tablespoon Feta Cheese Crumbles

Instructions

  1. Cut the half head of lettuce in half. Remove the core. Run under cold water and then pat dry.
  2. Mix the dressing ingredients together in a small bowl. Pour over the lettuce.
  3. Top with cucumber, tomato, peppers, olives, red onion, and feta cheese.
  4. Sprinkle with more fresh lemon and black pepper then enjoy!
