Beet and Burrata Pizza with Honey and Pistachios

Beet and burrata pizza combines roasted beets with fresh mozzarella, a drizzle of honey, and a bite of crunchy pistachios. The perfect funky pizza for a pizza night.

Do you ever feel like a broken record? I feel like when I talk to my kids, I have to repeat myself about 10 times before there is any movement or acknowledgement on their part. I get it. They are 2 and 4 so sometimes it can be a lot for them to take in.

As a parent I have to constantly remind myself to remember what it was like when I was younger—how it felt not knowing what your parents were asking from you, not knowing what their expectations were, not even knowing what the word expectations meant.

On the other hand, I remember my parents and what they did or said to us to make us get stuff done. I think, “Well it worked for my parents.”

I know I am being totally vague here. Sorry.

Trying to convince a toddler, whose taste in food you are well acquainted with, that they will like a new food like beets, is like talking to a wall.

It is like my Mom telling me how to swallow a pill for the first time when I was younger. “You just put it in your mouth, take a sip of water, and then swallow.” Sounds easy enough, right? I know in my Mom’s head she was thinking, Just friggen swallow the pill!

She was saying the right words; I just couldn’t get it.

I would literally jam a pill into the back of my throat, gag, and still not be able to swallow it. Mental block much? I didn’t get it until I was in high school. That and contact lenses. I just couldn’t grasp the whole idea.

Maybe I was dumb.

Oh God, maybe my kids are dumb. No way. They are for sure outsmarting me on the food front.

Beet and burrata pizza is made with thinly sliced roasted beets, fresh burrata, honey and pistachios for a crunch.

Jack and Andy used to like all the veggies when they were little. I know there has to be some memory hidden amongst the cobwebs created from too many chicken nuggets. When I tell them “Trust me, you’ll like it,” they just stare.

Maybe one day it will click and they will like things again.

I guess I shouldn’t count my chickens. I mean, look at their dad. If I offered him this, I am pretty sure he would cringe in fear.

Guess I will be waiting with a slice of beet and burrata pizza in my hand, for the day the veggie love clicks for ALL the men in my life.

Beet and Burrata Pizza with Honey and Pistachios

Beet and Burrata Pizza with Honey and Pistachios

Yield: 1 , 12 Inch Pizza
Prep Time: 20 minutes
Cook Time: 1 hour
Total Time: 1 hour 20 minutes

Crispy pizza crust topped with garlic, dreamy roasted beets, fresh burrata cheese, honey for extra sweetness, and lots of pistachios for extra crunch.

Ingredients

  • 2 Small Red Beets, washed and stem removed
  • 2 Small Golden Beets, washed and stem removed
  • Best Yeast Pizza Dough
  • 1 Teaspoon Minced Garlic
  • Olive Oil
  • 1 Large Piece of Burrata Cheese
  • 1/4 Cup Chopped Pistachios
  • 2 Tablespoons Honey
  • Fresh Basil

Instructions

  1. Preheat the oven to 375 degrees F. Wrap each beet tightly in foil. Place in the oven and roast for 45 minutes. Let the beets completely cool in the foil before handling. Use a kitchen towel you do not acre about or a few paper towels to protect your hands from staining while you gently rub/peel away the skin. Discard the skin and thinly slice each beet.
  2. Prepare the pizza dough according to the instructions.
  3. Preheat the oven to 500 degrees F with a pizza stone or pizza pan in the oven.
  4. Use your hands to gently stretch the dough out to about 12 inches round.
  5. Spread the olive oil and minced garlic on the entire surface of the dough. Transfer to the hot pan and bake for 5 minutes.
  6. Remove the dough from oven. Add beet slices and arrange in pretty layers. Drizzle with a tad more olive oil. Bake for another 10 minutes until the edges of the beets start to curl a little.
  7. Remove pizza once the dough is golden and crispy.
  8. Break the burrata into about 6-8 small hunks. Top the hot pizza with the burrata. It will start to melt into the beets right away.
  9. Top with honey, pistachios, and chopped fresh basil.
  10. Serve hot. Best day of.

    Also, I’m 34 and still can’t swallow a pill without a mouthful of food. Yes, like a dog.

      Hahaha glad you laughed at that. I was worried it was too harsh haha Yeah I still have to really focus to swallow a pill. Glad I’m not alone.
