I think I have told you guys how growing up, we always had a side salad with every dinner. Which just shows you not only what a rockstar mom I have, but how awesome us kids were that we actually ATE the salad.

You know that saying “save the best for last?” All three of us kids saved the salad for the last thing we ate. We would even scramble to the counter to scrape out the last remaining bits from the big salad mixing bowl.

The best part about the salad was having the freedom to choose your own salad dressing.

As a kid, you don’t get to make a lot of your own decisions. That’s a good thing, because if Andy had his way he would eat McDonalds every single day and have Sour Patch Kids for breakfast and never ever brush his teeth. I bet my brothers and I would have made similar choices around his age as well.

But it is nice to be given options sometimes.

Avocado Ranch Dressing - Sarcastic Cooking

My brother Zack was a devout Italian vinaigrette fan. My brother Nick a devout Ranch dressing follower. They both pretty much still align to those parties to this day.

I like to switch it up. I had ranch one day, Italian the next, and as I got older, maybe a little balsamic vinaigrette.

The salad never changed. It consisted of lettuce (iceberg or romaine), tomatoes, cucumbers, and olives. So, it was nice to give the salad a new twist with a different dressing every night, in my humble opinion.

I am hoping one day my kids will eat a salad with dinner. Ok, forget a whole salad. I’ll even hope for something green. Anything in the shade of green actually.

Until that day, I will eat all the salad with my new favorite dressing of the moment, avocado ranch.

I think this is the dressing of the summer. Creamy avocado blended with sour cream and buttermilk until the prettiest pale green. Then you add in whatever fresh herbs you have on hand. For me that was parsley, chives, dill, and basil. Season with salt and pepper and you have a banger of a summer salad dressing on your hands.

Avocado Ranch Dressing

Creamy avocado, buttermilk, and sour cream blended together with fresh herbs like dill, basil, parsley, and chives.

Ingredients

  • 1/4 cup sour cream
  • 1/2 cup buttermilk
  • 1 avocado
  • 1/4 tsp grated garlic
  • 1 tsp chopped fresh parsley
  • 1 tsp chopped fresh basil
  • 1 tsp chopped fresh chives
  • 1 tsp fresh chopped dill
  • salt to taste
  • freshly cracked black pepper to taste

Instructions

  1. Combine sour cream, buttermilk, avocado, and garlic in a food processor. Puree until smooth, scraping down the sides as needed.

  2. Add the fresh herbs. Pulse about 6 times until finely chopped.

  3. Add salt and pepper to taste. Pulse one or two more times to mix the salt and pepper into the dressing.
