Ok, Mike’s and my college friends: Hold up! These are not the pizza rolls you’re thinking about. Please, try to hide your disappointment a little more. For those of you who are not as privileged to have ever tasted the rolls I speak of, they are Totino’s. Sorry guys.

I will not be recreating a little rectangle filled with hot lava that no matter how long you wait to eat it, will still burn your mouth. At least not today anyway.

These pizza rolls are shaped like a cinnamon bun. Cinnamon roll? Cinnamon roll. Cinnabon is the famous food court restaurant of my youth. Mmmmm those delicious rolls of pastry with cinnamon sugar and icing… mmmm…. Sorry, been there done that!

I rolled out my favorite pizza dough recipe (the one with beer in it, click HERE), and then stuffed it with pepperoni, sausage crumbles, spinach, banana peppers, black olives, red onion, and green bell peppers. It wasn’t until I had already rolled up the whole long piece of dough when I realized I forgot mushrooms! Ugh!

That’s ok though. There is enough going on with these rolls that you won’t miss the mushrooms.

Time to confess something.

Over on Instagram, I was showing off a lot of Instant Pot recipes. I wanted this to be an Instant Pot recipe. And let me tell you, it was a massive fail. I then tried to revive the raw dough pizza soup by putting it in the oven for a bit.

Nope!

Still garbage. I had to trash the whole thing. Do you know how sad it is to toss a dough you make from scratch and let rise for two hours? I could have cried. Luckily, I had the other half of the homemade dough to play with, which was just enough to properly make this recipe in the oven.

Phew! Lucky for all of us indeed!

Supreme Pizza Rolls

Homemade pizza dough stuffed with sauce, spinach, sausage, banana peppers, green bell peppers, black olives, pepperoni, and cheese then rolled, cut and baked until crisp.

Ingredients

  • 8 oz homemade yeast pizza dough
  • 1/2 cup marinara sauce
  • 10 fresh spinach leaves
  • 1/2 green bell pepper thinly sliced
  • 1/4 red onion thinly sliced
  • 1/2 cup cooked sausage crumbles
  • 12 pepperoni slices
  • 1/3 cup banana peppers
  • 1/3 cup sliced black olives
  • 1 cup shredded mozzarella cheese
  • 1 tbsp unsalted butter

Instructions

  1. Make the dough ahead of time according to the instructions or purchase pre-made raw pizza dough and let that come to room temperature before rolling out. 

  2. Lightly flour a work surface and a rolling pin. Roll the pizza dough out to a 12x20 inch rectangle.

  3. Spread the sauce on the dough first leaving about a 1/8 inch border. Top with spinach, peppers, onion, pepperoni, sausage, olives, and then cheese.

  4. Roll the dough on the long edge towards you as you would a cinnamon roll. Not too tight as you squeeze out all the toppings. Slice the roll into 6 small rolls.

  5. Grease a medium cast iron skillet or a 7" circular baking dish with the butter. Add the rolls to the pan. Place the rolls with the seam side up against the edge so they do not split open.

  6. Preheat the oven to 500 degrees F. While the oven preheats let the dough puff back up for about 25-30 minutes.

  7. Bake the rolls for 20 minutes until crisp and golden. If the top is browning too quickly, cover with foil. Let cool for 5 minutes before removing from dish and serving.
