Charred pineapple frozen margaritas are the perfect drink to help you chill out over the summer. Pineapple charred under the broiler/ grill and then blended with tequila, lime juice, and pineapple juice is the perfect blend. Summer calls for a frozen margarita every now and again and the charred pineapple frozen margaritas are the answer!

We all need a drink. And a good one at that! I can finally disclose to you that I have been working on a cookbook! WHAT THE WHAT?!?! Since December I have been talking to a publisher and working on it. I cannot wait to share more details with you in a lengthier post at a later date.

For now, lemme just say, phew! I am tired and the book isn’t even close to being done yet!

Here is a little morsel about the book to hold you over until I can tell you more. It is an Instant Pot/Multi-Cooker book containing recipes which have 15 minutes of prep or less! You hear that? Or less?!?!?! Ugh! I can’t wait.

It is for my mental health.

I have cooked and cooked and cooked. And juggled two kids at home all at the same time. I basically never want to cook again. For now.

That’s why I have allowed myself this past week to sort of take a break. Clean my house, do that laundry, and just get back to square one. Back in my grade school days, a good friend of mine would be sick from school for what her mom referred to as a “mental health day.”

That was back in the late ’90’s.

I think we need more of that these days. Less pressure, more breaks, and more fun, frozen cocktails floating about. I would have made a frosé to celebrate, but so many others have beat me to the punch.

While I slowly crawl out of my rock of cookbook creation and catch up on what’s the what, I’ll just keep sipping my charred pineapple frozen margarita and be happy with the choice of charred over bruleed… How do you even spell brulee? That just looks wrong.

Charred Pineapple Frozen Margaritas

Sugared broiled pineapples blended with lime juice, ice, and tequila for the perfect summer chill out drink!

Ingredients

  • 2 cups cubed fresh pineapple
  • 2 tbsp brown sugar
  • 5 cups ice cubes
  • 1/2 cup tequila
  • 1/4 cup lime juice
  • 1/3 cup pineapple juice
  • 2 tbsp simple syrup
  • lime wedges garnish
  • fresh mint garnish
  • pineapple slices garnish

Instructions

  1. Preheat your broiler to high. Line a small baking sheet with parchment paper. Add pineapple to the lined baking sheet. Sprinkle the pineapple cubes with the brown sugar. Place under the broiler for 10 minutes until dark golden. Flip and char the other side for another 5-7 minutes.

  2. Add ice, charred pineapple, pineapple juice, tequila, lime juice and simple syrup to a blender. Press the crush ice setting and blend the mixture until it has the perfect frozen margarita texture.

  3. Pour into glasses rimmed with salt or chile lime seasoning. Garnish with lime wedges, pineapple slices, or fresh mint or all of the above.

    You have an excellent breezy style of writing so I’m sure your cookbook will be great fun to read. At the request of my family I have written 2 cookbooks. They wanted to be sure their favorite recipes didn’t die with me. (Yes, I’m old. I’ve been cooking for nearly 60 years.) My endeavor only entailed typing recipes into my computer and printing out 6 or 7 copies. It was tiring, boring and frustrating. I cannot imagine the amount of work involved in what you’re attempting. May your magnum opus prove to be worth all the sweat, tooth-grinding and hair-pulling.

      You are too kind. Cooking I can do it’s all that typing… You are so right. It is definitely not fun.
