Instructions

  1. First, combine all the dry seasonings in a small bowl and mix to combine.

  3. Now time to stuff and roll. Place a half slice of cheese on top of the center of the slice of beef. Near one corner place a few french fries and a pickle spear. Roll from that corner to the opposite end. Continue until all the roll-ups are rolled. Season with a pinch more of the seasoning blend.
  4. Roll-ups can either be grilled or broiled.
  5. With your grill on medium/high heat, place the roll-ups seam side down and grill for 4 minutes on one side and then flip and cook for 3 minutes on the other side.
  6. To cook under the broiler, heat a large cast iron skillet for 5 minutes under high heat. Carefully remove from oven. Place roll-ups on the hot skillet and return to the broiler for 7 minutes until cooked through and slightly crisp and golden.
  7. Let the roll-ups cool for two minutes before slicing into them. While they cool, make the dipping sauce. Mix the mayo, ketchup, and mustard in a small bowl.
