Ingredients

  • 1 - 1 1/2 Pounds of Skirt Steak fat trimmed off
  • 1/3 Cup Light Olive Oil
  • 1 Tablespoon Balsamic Vinegar
  • 1 Garlic Clove grated
  • 1/2 Teaspoon Oregano
  • Juice from 1/2 Lemon
  • Generous Pinch of Sea Salt
  • Freshly Ground Black Pepper

Instructions

  1. About an hour or two before grilling, add the olive oil, balsamic, lemon juice, garlic, oregano, salt and pepper to a gallon sized plastic food storage bag. Seal the bag and give it a good shake to combine the marinade. Open the bag, add the meat. Press most of the air out and then seal the bag. Store in the refrigerator for at least an hour.
  2. Once you are ready to eat, let the bag with the steak sit at room temperature for 10 minutes to get the chill out.
  3. Heat your grill over a high flame for at least 5 minutes.
  4. Remove the steak and add to grill. Grill for about 5 minutes on the first side. Flip and grill five minutes on the second side. Flip and grill for 2 more minutes on the first side and then flip and grill on the second side.
  5. Remove steak from grill. Let sit on a cutting board and rest for 5 minutes.
  6. Slice and serve with grilled pita bread and tzatziki sauce.
