Pound out each half of chicken breast so it is about 1/2-1/4 inch thick.

Lightly beat the eggs in a shallow dish.

Add the flour and the dry seasonings to a separate shallow dish. Mix with a fork to combine.

Add about an inch of canola oil to a cast iron or heavy bottomed skillet. Heat over high heat until the temperature reaches about 350 degrees F.

Dredge each chicken breast half in the egg mixture and then the flour mixture. Once in the flour mixture, place on a wire rack or plate off tot he side while the oil heats up.

Meanwhile, turn the oven broiler on low. Butter and season one side of each piece of bread with the garlic powder. Place under the broiler until lightly toasted. Keep the oven door open to make sure it doesn't burn.

Once the oil is hot, add the two chicken breast halves. Fry each side for about 8 minutes. Flip and fry the other side for 8 more minutes until golden.

Once fried and cooked (to 165 degrees internal temperature), place the chicken on a baking sheet. Cover each piece of chicken with about the same amount of marinara and cheese. Place under the broiler. Broil on low for 3-5 minutes until the cheese is melted.

Combine the kale and caesar dressing along with the parm in a small mixing bowl. mix until all the kale is evenly coated.

Place one piece of chicken on a slice of bread, top with kale, and then another slice of garlic bread. Cut in half and then eat!
