Greek Caesar Wedge Salad
A simple summer wedge salad that combines all you love about Caesar salad with a tradition Greek salad.

For the Dressing:

Caesar Salad Dressing
I use a low-cal one.

Fresh Squeezed Lemon Juice

Fresh Ground Black Pepper
For the Salad:

Head of Romaine of Iceberg Lettuce
cut in half and core removed

Cup
Diced English Cucumber

Cup
Diced and Seeded Tomato

Tablespoon
Chopped Peperoncino Peppers

Cup
Diced Kalamata Olives

Diced Red Onion

Feta Cheese Crumbles

Cut the half head of lettuce in half. Remove the core. Run under cold water and then pat dry.

Mix the dressing ingredients together in a small bowl. Pour over the lettuce.

Top with cucumber, tomato, peppers, olives, red onion, and feta cheese.

Sprinkle with more fresh lemon and black pepper then enjoy!
