First, combine all the dry seasonings in a small bowl and mix to combine.
-
Cut each slice of steak into 3 to 4 inch wide slices. Season each slice with a 1/2 teaspoon of seasoning mix. Place each slice between two pieces of plastic wrap. pound the meat very thin using a rolling pin or meat tenderizer.
-
Now time to stuff and roll. Place a half slice of cheese on top of the center of the slice of beef. Near one corner place a few french fries and a pickle spear. Roll from that corner to the opposite end. Continue until all the roll-ups are rolled. Season with a pinch more of the seasoning blend.
-
Roll-ups can either be grilled or broiled.
-
With your grill on medium/high heat, place the roll-ups seam side down and grill for 4 minutes on one side and then flip and cook for 3 minutes on the other side.
-
To cook under the broiler, heat a large cast iron skillet for 5 minutes under high heat. Carefully remove from oven. Place roll-ups on the hot skillet and return to the broiler for 7 minutes until cooked through and slightly crisp and golden.
-
Let the roll-ups cool for two minutes before slicing into them. While they cool, make the dipping sauce. Mix the mayo, ketchup, and mustard in a small bowl.
-
Use a fork and knife to cut the roll-ups and dip the bites into the sauce.
