A Cedar Spoon – Thai Turkey Lettuce Wraps

Ingredients

  • 10-12 bibb lettuce butter lettuce leaves, washed and dried
  • 1 lb ground turkey
  • 4 tsp. vegetable or olive oil separated
  • ½ cup sweet white onion chopped
  • ½ red pepper chopped
  • ½ green pepper chopped
  • 1 jalapeno seeds and membranes removed, chopped (optional for spice)
  • 2 garlic cloves minced
  • ½ tsp crushed red pepper flakes
  • 1 Tbsp. soy sauce
  • 1 Tbsp. rice vinegar
  • 2 Tbsp. lime juice
  • 1 Tbsp. brown sugar
  • 1 bunch of green onions chopped
  • 3 Tbsp. fresh cilantro chopped
  • ¼ cup chopped peanuts
  • Salt and pepper to taste

Instructions

  1. In a medium mixing bowl whisk together crushed red pepper flakes, soy sauce, rice vinegar, lime juice and brown sugar. Set aside.
  2. Heat 2 tsp. oil in a large skillet on medium high heat. Brown the ground turkey until cooked through. Remove and set aside in a bowl.
  3. Using the same skillet turn the heat to medium and heat with 2 tsp. oil and sauté the onion, peppers, jalapeno and garlic until soft. Add the meat to the vegetable mixture and stir.
  4. Mix in the soy sauce marinade and let simmer for 2 minutes. Add salt and pepper to taste.
  5. Remove the turkey mixture and put into a serving bowl. Mix in the fresh cilantro and green onions.
  6. Set out the bibb lettuce, turkey mixture, chopped peanuts and extra cilantro and green onions for garnish and allow people to create their own lettuce wraps.
  7. Other garnishes include: fresh diced tomatoes, avocado, fresh mango.
