Preheat oven to 375 degrees F. Grease all the wells of two 12 cup muffin tins with butter. Set off to the side.

In a large bowl, stir together the brown sugar and the melted butter.

Whisk in the milk, egg, vanilla, molasses, and shredded apple.

Add the flour, baking soda, cinnamon, and salt to a small mixing bowl. Whisk to combine.

Pour the dry ingredients into the wet and use a wooden spoon or rubber spatula to combine until just mixed.

Scoop the batter into each muffin tin, filling about 2/3 the way up. Top with a small apple slice.

Bake muffins for 15-17 minutes until a toothpick inserted into the center of a muffin comes out clean.
