Apple Brown Sugar Muffins

Moist apple and brown sugar muffins. Perfect for quick breakfasts or a seasonal snack!

Ingredients

  • 1 cup light brown sugar
  • 1/2 cup butter melted
  • 1 cup milk
  • 1 egg
  • 1 teaspoon vanilla
  • 1 Teaspoon Molasses
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 Cup Shredded Apple
  • 14-16 Thin Apple Wedge slices for tops

Instructions

  1. Preheat oven to 375 degrees F. Grease all the wells of two 12 cup muffin tins with butter. Set off to the side.
  2. In a large bowl, stir together the brown sugar and the melted butter.
  3. Whisk in the milk, egg, vanilla, molasses, and shredded apple.
  4. Add the flour, baking soda, cinnamon, and salt to a small mixing bowl. Whisk to combine.
  5. Pour the dry ingredients into the wet and use a wooden spoon or rubber spatula to combine until just mixed.
  6. Scoop the batter into each muffin tin, filling about 2/3 the way up. Top with a small apple slice.
  7. Bake muffins for 15-17 minutes until a toothpick inserted into the center of a muffin comes out clean.
