Prep Time 1 hour 10 minutes
Cook Time 8 minutes
Total Time 1 hour 18 minutes
Servings 2 Dozen Cookies

Ingredients

  • 1 cup peanut butter
  • 1/4 heaping cup Nutella
  • 1 large egg
  • 3/4 cup sugar
  • 1/4 cup brown sugar
  • 1/4 cup unsweetened cocoa powder
  • 2 tablespoons brewed coffee espresso, or water
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 12 Oreo cookies lightly crushed

Instructions

  1. Combine peanut butter, Nutella, egg, and sugars in the bowl of an electric stand mixer fitted with the paddle attachment. Beat on medium speed until combined, scraping down the sides as needed.
  2. Add in the cocoa powder, coffee, vanilla, and baking soda. Beat for another minute or two until well combined. Add the crushed Oreos and use a rubber spatula to gently combine. Place the mixing bowl in the refrigerator for an hour.
  3. Preheat the oven to 350 degrees F. Line two baking sheets with parchment paper. Use a medium scoop, about 1 ½ tablespoons, and scoop out dough about two inches apart. Use two fingers to slightly press down the tops of the dough.
  4. Bake cookies for 8 minutes. Let cookies cool completely on baking sheet.
