Fall Chopped Salad

Ingredients

  • For the Salad:
  • 3 Cups Spinach chopped
  • 1 Cup Arugula chopped
  • 1 Apple peeled and chopped
  • ½ Cup Walnuts chopped
  • ½ Cup Fresh Cranberries halved
  • 4 Pieces Cooked Bacon chopped
  • ¼ Cup Blue Cheese Crumbles
  • For the Dressing:
  • 1 Tablespoon Red Wine Vinegar
  • 2 Tablespoons Olive Oil
  • ½ Teaspoon Salt
  • ¼ Teaspoon Pepper
  • 1 Teaspoon Honey
  • 1 Teaspoon Lemon Juice

Instructions

  1. Cook the bacon until crisp.
  2. Chop all ingredients.
  3. Arrange spinach and arugula on the bottom of the serving plate.
  4. Arrange apple, walnuts, cranberries, bacon, and blue cheese on top of the greens.
  5. In a small bowl, whisk together the red wine vinegar, olive oil, salt, pepper, honey, and lemon juice. Drizzle over the salad and then serve.
