  • 1 Cup Unsalted Butter room temperature
  • ¾ Cup Packed Light Brown Sugar
  • ¾ Cup Granulated Sugar
  • 2 Large Eggs
  • 1 Teaspoon Pure Vanilla Extract
  • 2 ½ Cups Rolled Oats
  • 1 Cup Chopped Walnuts
  • 1 ½ Cup Roughly Chopped Milk Chocolate

Instructions

  1. Preheat the oven to 350 degrees F. Line two large baking sheets with parchment paper and set off to the side for later.
  2. In a medium mixing bowl whisk together the flour, baking soda, and salt. Set off to the side.
  3. In the bowl of an electric stand mixer fitted with the paddle attachment, cream butter and sugars at medium speed, for three minutes until light and fluffy.
  4. Scrape down the sides, add vanilla, and mix another minute until combined.
  5. Add one egg at a time, mixing for a minute in between. Scrape down the sides as needed.
  6. Add the flour mixture all at once. Mix on low speed until just about combined. Add oats, walnuts, and chocolate. Mix until combined.
  7. Scoop out ¼ cup portions of dough on to the parchment. Place each portion of dough approximately 1 ½ inches apart. Continue until each sheet is full.
  8. Bake cookies for 18-20 minutes. Let cookies cool for five minutes on the baking sheet before transferring to a wire rack. Continue baking process until all the dough is used.
