Preheat the oven to 425 degrees F.

Combine the harissa, melted butter, honey, and a tiny pinch of salt and pepper together in a small container. Mix.

Cut the sweet potatoes, about an inch thick slices. Place on a medium baking sheet.

Cover the sweet potatoes with 2-3 tablespoons of the butter mixture. Use your hands to toss and evenly coat all the slices.

Bake in the oven for 20 minutes.

After 20 minutes, remove the sweet potatoes, cover with another 2 tablespoons of the butter mixture, flip the potatoes over, and bake for another 20 minutes.

Serve with another drizzle of harissa honey butter on top along with a little drizzle of honey and a sprinkle of salt and pepper.
