Add the kimchi to a food processor and pulse until finely chopped.

Add the ground turkey, chopped kimchi, sesame seeds, salt, pepper, sesame oil, cilantro, garlic, and lime zest to a large mixing bowl. Use your hands to mix the meat until it is evenly incorporated.

Form into 1/3 cup patties. Place on a foil lined baking sheet.

Turn the broiler on high with a rack in the middle of the oven.

Place the baking sheet under the broiler for 4 minutes per side until deeply golden and crisp. Internal temp should be over 160 degrees F.

Assemble the burgers with sriracha mayo, avocado, pickled veggies, lettuce, and tomato on top of the burger.
