Leftover Bruschetta Spaghetti

Re-purpose one of your favorite appetizers into a fresh summer pasta dish.

Ingredients

  • ½ Pound Cooked Whole Wheat Spaghetti Noodles
  • 1 – 2 Cups Prepared Bruschetta
  • For the Bruschetta:
  • 2 Large Tomatoes seeded and diced
  • 1 Tablespoon Finely Diced Red/White Onion
  • 1 Small Garlic Clove grated
  • Large Pinch of Salt
  • ¼ Teaspoon Ground Black Pepper
  • 1 Tablespoon Olive Oil
  • ½ Teaspoon Balsamic Vinegar
  • 8-10 Basil Leaves chopped

Instructions

  1. If you do not have premade bruschetta, combine all the ingredients for the above recipe in a small bowl and mix to combine. Let sit while the pasta cooks.
  2. Cook the spaghetti according to the packaging instructions. Pour the pasta and water into a strainer in the sink.
  3. Place the pot the pasta was cooked in back on the stove. Add the bruschetta to the hot pot. Let the hot pot warm the tomatoes for a few minutes. Add back in the pasta and stir to combine. Add more salt and pepper to taste. Serve.
