No Fuss Beef and Black Bean Chili

Super easy classic beef and bean chili. A very versatile dish you can add and sub in whatever you have on hand!

Ingredients

  • 1 Tablespoon Olive Oil
  • 1 lb. Lean Ground Beef
  • 1 Red/Orange Bell Pepper seeded and diced
  • ½ Cup Diced Red Onion
  • ¾ Cup Frozen Corn Kernels thawed
  • 1, 15 Ounce Can Black Beans drained and rinsed
  • 1, 28 Ounce Can Crushed Tomatoes
  • 1 ½ Cups Low-Sodium Beef Stock
  • 1 Teaspoon Salt
  • ½ Teaspoon Black Pepper
  • ¼ Teaspoon Crushed Red Pepper Flakes
  • Tiny Pinch of Cayenne Pepper or more depending on your heat tolerance
  • 2 Tablespoons Chili Powder
  • 1 Teaspoon Cumin
  • ½ Teaspoon Dried Oregano

Instructions

  1. Add olive oil to a large stockpot and warm over medium heat. Add ground beef and sauté. Use a wooden spoon to break apart the beef into small pieces. Add the bell peppers and sauté for seven minutes. Add the onion and sauté until translucent.
  2. Add corn, beans, tomatoes, and stock to the pot. Add all the seasonings. Stir to combine.
  3. Bring to a simmer and cook for fifteen to twenty minutes.
