Ingredients
1TablespoonOlive Oil
1lb.Lean Ground Beef
1Red/Orange Bell Pepperseeded and diced
½CupDiced Red Onion
¾CupFrozen Corn Kernelsthawed
1, 15OunceCan Black Beansdrained and rinsed
1, 28OunceCan Crushed Tomatoes
1 ½CupsLow-Sodium Beef Stock
1TeaspoonSalt
½TeaspoonBlack Pepper
¼TeaspoonCrushed Red Pepper Flakes
Tiny Pinch of Cayenne Pepperor more depending on your heat tolerance
2TablespoonsChili Powder
1TeaspoonCumin
½TeaspoonDried Oregano
Instructions
Add olive oil to a large stockpot and warm over medium heat. Add ground beef and sauté. Use a wooden spoon to break apart the beef into small pieces. Add the bell peppers and sauté for seven minutes. Add the onion and sauté until translucent.
Add corn, beans, tomatoes, and stock to the pot. Add all the seasonings. Stir to combine.
Bring to a simmer and cook for fifteen to twenty minutes.
