Roasted Strawberry, Rhubarb, and Rose Water Margaritas

Naturally sweetened roasted strawberry and rhubarb margaritas with a dash of rose water.

Ingredients

  • 1 Pint Fresh Strawberries stems removed and chopped
  • 5 Stalks of Rhubarb greens removed and cut into 1 inch pieces
  • Juice from 1/2 an Orange
  • 2 Tablespoons Maple Syrup
  • 1/2 Cup Silver Tequila
  • 4-5 Cups of Ice
  • 1/2 Teaspoon Nielsen-Massey Rose Water

Instructions

  1. Preheat the oven to 350 degrees F. Line a medium baking sheet with parchment paper.
  2. Add the cut fruit along with the maple syrup and orange juice to the prepared baking sheet. Toss together to evenly coat.
  3. Roast for 40 minutes. Let cool completely on the pan.
  4. Transfer fruit, ice, tequila, and rose water to a blender. Blend until ice is crushed/desired consistency.
  5. Serve in glasses rimmed with salt with a lime slice and strawberry for garnish.
