Spinach and Tomato Breakfast Skillet

An easy and balanced breakfast of bacon, eggs, spinach, and tomatoes for two or one if you are really hungry.

Ingredients

  • 2 Pieces of Bacon
  • 3 Cups Baby Spinach
  • 1 Roma Tomato sliced
  • 2 Large Eggs
  • Salt
  • Pepper
  • Crushed Red Pepper Flakes
  • Lemon Zest optional

Instructions

  1. Heat a medium skillet over medium/high heat. Add the bacon and cook until crispy. Remove the bacon, once crisp, and add to a paper towel to drain.
  2. Add the spinach to the pan. Toss a few times to evenly wilt. Add the tomatoes and create two wells for the eggs.
  3. Crack the eggs into the wells. Cover the pan with a lid and continue to cook until the eggs are cooked through.
  4. Add the bacon back to the pan, remove from heat, and season with salt and pepper.
