Spinach and Tomato Breakfast Skillet
An easy and balanced breakfast of bacon, eggs, spinach, and tomatoes for two or one if you are really hungry.

Heat a medium skillet over medium/high heat. Add the bacon and cook until crispy. Remove the bacon, once crisp, and add to a paper towel to drain.

Add the spinach to the pan. Toss a few times to evenly wilt. Add the tomatoes and create two wells for the eggs.

Crack the eggs into the wells. Cover the pan with a lid and continue to cook until the eggs are cooked through.

Add the bacon back to the pan, remove from heat, and season with salt and pepper.
