Ingredients
1PoundCooked Macaroni Noodles
1/4CupUnsalted Butter
1/4CupAll Purpose Flour
2CupsMilk
1-2TablespoonsAdobo Sauce from Can of Chipotles in Adobo
1TeaspoonSalt
1/2TeaspoonBlack Pepper
1/4TeaspoonSmoked Paprika
1/4TeaspoonGround Cumin
8OuncesSharp Cheddargrated
Cilantro for garnishoptional
Instructions
Cook noodles according to the packages instructions. Drain and set off to the side to cool.
Melt butter in a medium sized pot over a medium/low flame. Once the butter is melted, whisk in the flour. Cook for 1-2 minutes.
Slowly pour in the milk, whisk vigorously to combine.
Whisk in the seasonings and adobo. Increase the flame to medium. Keep whisking until the sauce starts to thicken.
Add in the cheese. Whisk until the cheese melts.
Turn off the flame. Add the noodles to the sauce. Mix to combine. Allow the sauce to cool for about 5-10 minutes before eating so the sauce has time to thicken up.
