Stovetop Chipotle Mac and Cheese

15 Minute mac and cheese that satisfies your craving and doesn't make you feel like you are eating the boxed stuff. Smoky chipotle peppers add a gentle heat to a traditional stovetop mac.

Ingredients

  • 1 Pound Cooked Macaroni Noodles
  • 1/4 Cup Unsalted Butter
  • 1/4 Cup All Purpose Flour
  • 2 Cups Milk
  • 1-2 Tablespoons Adobo Sauce from Can of Chipotles in Adobo
  • 1 Teaspoon Salt
  • 1/2 Teaspoon Black Pepper
  • 1/4 Teaspoon Smoked Paprika
  • 1/4 Teaspoon Ground Cumin
  • 8 Ounces Sharp Cheddar grated
  • Cilantro for garnish optional

Instructions

  1. Cook noodles according to the packages instructions. Drain and set off to the side to cool.
  2. Melt butter in a medium sized pot over a medium/low flame. Once the butter is melted, whisk in the flour. Cook for 1-2 minutes.
  3. Slowly pour in the milk, whisk vigorously to combine.
  4. Whisk in the seasonings and adobo. Increase the flame to medium. Keep whisking until the sauce starts to thicken.
  5. Add in the cheese. Whisk until the cheese melts.
  6. Turn off the flame. Add the noodles to the sauce. Mix to combine. Allow the sauce to cool for about 5-10 minutes before eating so the sauce has time to thicken up.
