Three Ingredient Pressure Cooker Marinara Sauce

Super easy pressure cooker fresh tomato sauce that mimics the flavors of a slow roasted tomato sauce.

Total Time 50 minutes
Servings 6 -7 cups of sauce

Ingredients

  • 2 lbs Fresh Cherry or Plum Heirloom Tomatoes cut in half
  • 4 Cloves of Garlic smashed
  • 1 Cup Extra Virgin Olive Oil
  • Salt and Pepper to taste

Instructions

  1. Add the tomatoes, garlic, olive oil, salt, and pepper to the bowl of your pressure cooker/ multi-cooker.
  2. Secure the lid and set to high pressure for 45 minutes, or the soup setting on high pressure for 45 minutes will work too.
  3. Quick release the steam. Remove lid and transfer contents to two large quart sized mason jars. Use an immersion blender to puree the sauce until smooth.
  4. Or you can wait until the mixture cools and then add it to a blender and puree until smooth.
  5. Note: If you want to make this a four ingredient sauce, add in a handful of fresh basil leaves before pureeing for a depth of flavor.
