Zucchini and Corn Hash

Ingredients

  • 1 Tablespoon Olive Oil
  • 1 Large Zucchini diced
  • 1 Ear of Corn shucked
  • ½ Teaspoon Salt
  • ¼ Teaspoon Black Pepper
  • Pinch of Crushed Red Pepper Flakes
  • ¼ Teaspoon Smoked Paprika
  • 1 Tablespoon Chopped Cilantro
  • Juice of ½ Lime

Instructions

  1. Add olive oil to a large skillet. Heat oil over medium heat for one minute.
  2. Add zucchini to the hot oil and sauté for 10-12 minutes until tender. Stir occasionally.
  3. Add the corn to the pan and sauté an additional 5-10 minutes.
  4. Sprinkle in the salt, pepper, red pepper flakes, paprika, and cilantro. Stir to combine. Add lime juice right before serving.
  5. Serve hash with a fried or poached egg for brunch/breakfast or serve as as a side dish.
