Creamy Instant Pot chicken and roasted red pepper spaghetti combines roasted red peppers, chicken, and spaghetti in a creamy Gruyere-Parmesan cheese sauce. The Instant Pot cooks the noodles, chicken, peppers, garlic, and crushed red pepper flakes in 6 minutes. Mix in all the cheese and then serve! This makes for one easy weeknight meal.

I need to get my fix! Ever since I did my last library cooking class all about the Instant Pot and demoed my Green Chili Macaroni and Pimento Cheese recipe, I have been craving a creamy, cheesy pasta. Come to mama!

The reason I truly want this pasta is because at my demo the entire Instant Pot full of green chili macaroni and pimento cheese went. No leftovers for the chef! Womp, womp.

I tried to let my craving go but then I started seeing these amazing, creamy pasta dishes everywhere. Sort of like when you’re waiting and waiting and waiting for your boyfriend to just get off his butt and propose to you already, and you keep seeing people’s engagement pics or wedding prep everywhere!

Not that I have experience with the above statement or anything. Cough, Mike, cough.

Anyhow, I started seeing creamy Instant Pot pasta all the time. It started with this one with sausage from Tipsy Housewife. I really wished I was having that for dinner when I saw her post that recipe. Then this creamy chicken spaghetti from Carlsbad Cravings got my mouth watering. I even ventured down a Pinterest wormhole of creamy chicken chili recipes like this one from Crunchy, Creamy, Sweet.

Enough was enough!

At the end of my rope and with a very bare bones fridge in front of me, I still scrounged together the ingredients to make this recipe. 

All you need to make Creamy Instant Pot Chicken and Roasted Red Pepper Spaghetti is 3/4 a box of spaghetti, 2 chicken cutlets, 2 roasted red peppers, Gruyere cheese, and Parmesan cheese. The pasta and chicken is cooked in the Instant Pot for 6 minutes. The excess water from cooking the pasta is perfectly salty and will thicken when you add the cheese to make the most luscious sauce.

Finally I got my creamy pasta fix. Pretty sure we will be making this again in the near future because of how easy a recipe it is and because that cheeeeese sauce!

Creamy Chicken and Roasted Red Pepper Spaghetti

Creamy Gruyere-Parmesan cheese sauce coated spaghetti noodles cooked with chicken, roasted red peppers, garlic, and crushed red pepper flakes all in the Instant Pot.

Ingredients

  • 10 oz dry spaghetti noodles, cracked in half
  • 3 1/2 cups water or chicken stock
  • 3/4 cup chopped roasted red peppers, about 2 roasted red peppers
  • 2 chicken breast cutlets or one large chicken breast, cut into 1 inch cubes
  • 2 garlic cloves, minced
  • 1 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp crushed red pepper flakes, plus more for topping
  • 1/2 tsp dried oregano
  • 1/2 tsp dried thyme
  • 1 cup freshly grated Gruyere cheese
  • 1/2 cup freshly grated Parmesan cheese
  • Fresh basil, optional topping

Instructions

  1. Add the cracked noodles to the Instant Pot, Arrange in a staggered almost birds nest like pattern. This will help ensure the noodles do not stick together while cooking. Pour water to cover. Top the noodles with the red pepper, the raw chicken chunks, garlic.
  2. Season the top of the chicken and peppers with the salt, pepper, crushed red pepper flakes, oregano, and thyme.
  3. Secure the lid with the steam vent in the sealed position. Press "Pressure Cook." Ensure the light is beneath "High Pressure." Use the -/+ buttons to adjust the time until the display reads 6 minutes.
  4. When the timer sounds, quick release the pressure. Remove the lid and use tongs to give everything a good stir.
  5. Add both cheeses. Stir until the cheese is melted and everything is evenly coated.
  6. Top each serving with a little more crushed red pepper flakes and fresh basil if using.
