Taco Salad Veggie Burgers

Taco salad veggie burgers are the perfect meal when you want that Dorito topped salad and a veggie burger with cheese all at the same time. A spicy lime ranch dressing salad sits on top of a veggie burger and a layer of spiced refried black beans. This burger has it all!

Mike always complains about the times I make taco salad.

Not for the reasons you think though.

If you think it is because of the olives and tomatoes, then you are wrong.

Mike hates when I make taco salad because as much as I try, I do not know how to make a small, 2 person batch of the salad.

I make this salad every once in a while when I get a hankering.

I end up using a giant mixing bowl and then eating the salad for 10 leftovers for a week after.

Here’s the thing though…

I don’t mind eating the soggy salad leftovers for that long.

Mike does.

This recipe came to fruition because I really wanted to try to condense all the salad fixings into taco salad veggie burgers.

I had to prove it to Mike that I could minimize the salad.

This salad topping is similar to the classic taco salad with Doritos, but it has a twist.

The dressing has a kick to it!

Ingredients for the spicy lime ranch:

  • Ranch dressing
  • Hot sauce
  • Lime juice

I even use this dressing combo for coleslaw mix on fish taco nights.

The burger is simple. I just use an Impossible burger.

They are our favorites of all the ones we have tried so far and have a good dose of protein.

You can use a chicken, beef, or turkey burger if you want too.

Grill the burgers.

Refried Beans for Taco Salad Burgers | Sarcastic Cooking

While the burgers are cooking, you are going to make the refried bean topping.

Saute some diced onion in olive oil.

Add a half a can of black beans and some spices.

Cook until tender while gently smashing the beans until they are to your liking.

Set off to the side.

Top the burgers with colby jack.

While the burgers are resting, mix together the dressing and salad topping.

For the salad topping:

  • chopped romaine
  • diced tomatoes
  • sliced black olives
  • crushed Dorito chips
  • a sprinkle of shredded Mexican or crumbled Cojita cheese

Toast the buns.

Add the refried beans to the bottom bun.

Top with the burger and then a big serving of salad.

Top it with the top bun and then enjoy your very own messy, big, taco salad veggie burgers.

Taco Salad Veggie Burgers

Grilled veggie burgers topped with cheese, taco salad with Doritos and a spicy lime ranch dressing, and homemade refried black beans.

Ingredients

  • 4 Impossible Burger Patties
  • 4 Slices of Colby Jack
  • 4 Brioche Burger Buns
  • 1/2 can of drained and rinsed black beans
  • 1/4 cup diced yellow onions
  • 2 tbsp extra-virgin olive oil
  • 1 tsp ground cumin
  • 1/2 tsp chili powder
  • 1/4 tsp salt
  • 1/2 cup Ranch dressing
  • 1 tbsp hot sauce (I used Cholula)
  • Juice from 1 lime
  • 1 head romaine lettuce, chopped/shredded
  • 2.25 oz can sliced black olives, drained
  • 1 beefsteak tomato, diced
  • 2 tbsp shredded Mexican cheese or crumbled cojita cheese
  • 3/4 cup crushed Dorito chips

Instructions

  1. Preheat the grill to medium/high. Separate the frozen burgers and set off to the side until the grill is ready.
  2. Mix together the dressing ingredients; ranch, hot sauce, and lime juice in a medium mixing bowl. Set in the fridge until ready to serve the burgers.
  3. Place the burgers on the grill and grill for about 7 minutes per side. When the second side is almost done, top each burger with cheese and once the cheese melts, remove and set off to the side.
  4. While the burgers cook, add the olive oil to a medium skillet over medium heat. Add the onion and cook until almost translucent. Add the cumin, chili powder, and salt. Mix. Add the beans and mix to combine. Use the back of a spatula or wooden spoon to smash the beans. Keep off to the side off the heat while you arrange the burgers.
  5. Toast the buns until lightly golden.
  6. Add the lettuce, tomatoes, and olives to the bowl with the dressing. Mix to combine.
  7. Arrange the burgers. Add a few tablespoons of the bean mixture to each bottom bun. Add a burger patty to the bean layer. Use tongs to add a heaping amount of salad to each burger patty. Add a big pinch of the Doritos to each salad pile along with a pinch of the cheese. Place the top bun over the Doritos and salad. Serve.
