It’s no secret I run a food blog and take care of Andy for a living. In order to have both of these jobs working cohesively, I have to do a bit of juggling. This means cooking while Andy is napping, corralled in the highchair, or under the care and supervision of another person.
The day when I was feeling a bit brave and Andy was feeling a bit clingy was when I decided to try and prep, bake, and photograph these cookies. I knew it would be crazy and probably take twice as long to bake, but I went for it anyway. With the holidays around the corner, I wanted to get as many recipes done in advance so I could actually spend time away from the kitchen when Mike is off from work and we have a bit of family time.
Confession: The story I am about to tell is 100% true. I seriously cannot make this stuff up! The story I am about to tell has nothing to do with these cookies. These cookies are soft like a muffin top (which I am trying to get rid of hahah) and covered in a lemony glaze. They are awesome. Making friends as an adult is hard work. Mike and I have these neighbors, two houses down. They have three sons and are most likely in their mid to late thirties. He is a Chicago cop and the wife is a nurse. We really like them and want to eventually get to the point of hanging out and drinking beers with them once all our kids are in bed. Plus, you can always use a friend who is a cop because you never know. Anyway, we have made this our summer goal. Not creepy at all, right? [Read more…]
Oh man. Summer is in full swing here in my casa. Baby pool, check! SPF 50 for my pale body, check! Beers that require fruit, check! Watermelon, check! Ice cream sandwiches, check!
Summer as a child was full of Push Pops, Fudgsicles, and ice cream sandwiches. It was also full of staying out in the yard until the sun set. We promised my parents we would be quiet so we could stay out later and catch fireflies. Skinned knees, asphalt scratches, grass stains, sticky fingers, and hair plastered to your forehead by sweat.
