Raise your hand if you had a Super Bowl hangover yesterday? Hold on, Mom, before you go cursing my name and asking where you went wrong that your daughter is writing on the internet about a hangover. I don’t really have an alcohol hangover.

I ate so much dairy, chips, fried food, and greasy food the other day and honestly throughout the last week it all finally caught up with me. Those cold and snow days killed me.

There was little else to do to pass the time aside from snacking throughout the day, which is something I try to avoid when not trapped in my house on lock down for three days.

This week I am getting back to a routine. I need a break from cheese and dairy in general. All the leftover Super Bowl snack food also needs to be hidden out of sight from me and the kids. I tried to keep busy cleaning up and doing laundry but every time I was in that kitchen it was like the chips were calling me to eat them.

I resisted, grabbed an apple, and then kept moving. 

Yesterday for dinner I made my new favorite (I know I say that all the time) skillet Greek chicken with Peppadew peppers, olives, and onions. The chicken is tender and caramelized in a honey, lemon, mustard sauce. I serve them to Mike in pita bread, but I like to just eat it as is. Skillet Greek chicken is also even better the next day on a salad.

I like for this meal to be lighter because I overdid it, but if you haven’t been overdoing it, feel free to add your favorite tzatziki to the top for an extra punch of flavor.

Skillet Greek Chicken

Caramelized sweet and tart Greek chicken made in one pan with onions, Peppadew peppers, and olives. Serve over greens or pita bread.

Ingredients

  • FOR THE MARINADE:
  • 1 tbsp extra-virgin olive oil
  • 1 tbsp red wine vinegar
  • 1 tsp dijon mustard
  • 1 tsp honey
  • 1/2 tsp oregano
  • 1/4 tsp garlic powder
  • 1/4 tsp dried thyme
  • 1/4 tsp smoked paprika
  • salt and pepper
  • FOR THE SKILLET:
  • 1 lb chicken breast cutlets, cut into thin strips width-wise
  • 2 tbsp extra-virgin olive oil
  • 1/2 white onion, sliced
  • 1/2 cup Peppadew peppers
  • 1/2 cup pitted Castelvetrano olives
  • salt and pepper to taste
  • squeeze of lemon juice
  • 1 tbsp fresh chopped flat-leaf parsley, for garnish
  • pita bread or a bed of mixed greens, for serving

Instructions

  1. Mix the marinade ingredients together in a deep sided baking dish until combined. Add chicken and let it marinade at room temperature for about 5 minutes, while you gather ingredients.
  2. heat a medium skillet over medium for a minute or two. Add oil, swirl to coat pan. add the onions and cook for 2 minutes.
  3. Using tongs, add the chicken strips to the hot pan. Increase to medium/high heat. Cook for about 10 minutes until the onions and chicken start to caramelize. stir intermittently.
  4. reduce the heat to medium, mix in the peppers and olives. Add more salt and pepper to taste.
  5. When the chicken is cooked through, remove skillet from heat. Add a squirt of lemon juice and a bit of fresh parsley to finish it off.
  6. Serve with pita bread or greens.

Notes

Leftover chicken, peppers, onions, and olives also go great on a salad! Bonus meal!
