Turkey Reuben Sandwich

Turkey Reuben sandwich, or a Rachel, is made with sliced deli turkey, Swiss, sauerkraut, and a homemade Russian dressing. Cook in a cast iron skillet until golden and melty. This sandwich is the healthier counterpart to the Reuben.

I just found out that there is a counterpart to the classic Reuben sandwich.

Let’s start off with the ingredients for the classic Reuben:

  • sliced corned beef
  • sauerkraut
  • Swiss cheese
  • Russian dressing
  • rye bread

These sandwiches are the reason I always make corned beef for St. Patrick’s Day.

I have also been known to pizza-fy a Reuben. Don’t knock it until you try it!

The Rachel, or turkey reuben sandwich, is the healthier counterpart to the Reuben.

Substitute sliced oven-roasted turkey breast for the corned beef to make a Rachel.

Mike likes to call these fancy grilled cheese sandwiches.

He really has a knack for naming recipes.

The combination of Russian dressing, Swiss cheese, rye bread, and sauerkraut is great on it’s own.

I made a veggie based version with beets!

Again, don’t knock it until you try it.

I do not like to buy a whole bottle of Russian dressing for the few occasions we make these sandwiches throughout the year.

This turkey reuben sandwich has a bonus recipe for a small amount of homemade Russian dressing.

Russian Dressing Ingredients | Sarcastic Cooking

All you need to make it are:

  • mayonnaise
  • ketchup
  • mustard
  • Worcestershire
  • smoked paprika
  • prepared horseradish
  • relish
  • minced onion
  • salt & pepper

PS this is also just fabulous on patty melts or burgers!

Super Bowl and football playoffs are right around the corner.

I think these sandwiches would be great for a small football themed gathering.

Rachel Sandwiches / Turkey Reuben Sandwiches | Sarcastic Cooking

Turkey Reuben Sandwich

Cook Time: 20 minutes
Total Time: 30 minutes

Rachels or turkey Reubens are made on rye bread with homemade Russian dressing, sauerkraut, Swiss cheese, and sliced roasted turkey breast.

Ingredients

  • For the Russian Dressing:
  • 1/2 cup mayonnaise
  • 3 tbsp ketchup
  • 1 tsp yellow mustard
  • 1 tsp Worcestershire
  • 1/2 tsp prepared horseradish
  • 1 heaping tbsp minced onion
  • 1 tsp relish
  • 1/2 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • For the Rachels:
  • 1lb sliced deli oven roasted turkey breast
  • butter
  • 3/4 cup jarred sauerkraut
  • 1-2 tbsp Russian dressing (above) per sandwich
  • 8 slices of Swiss cheese, cut in half
  • 8 slices of soft rye bread, like Rosen's

Instructions

  1. Combine all the ingredients for the Russian dressing in a small mixing bowl. Whisk to combine. Transfer to a jar or container with a lid. Store in the fridge until ready to make the sandwiches.
  2. Heat a cast iron skillet over medium low for 1-2 minutes.
  3. Spread butter over one side of each slice of bread. Place butter side down on the hot cast iron.
  4. Top each slice with 1 tbsp of Russian dressing.
  5. Top one slice with a few tablespoons of the sauerkraut and cover with a half slice of cheese. Top the other slice with a half slice of cheese and then about 3-4 slices of turkey. Top each half with another half of the Swiss.
  6. Cook until golden and the cheese starts to melt, about 3 minutes. Flip the sauerkraut side over the turkey half. Gently press down using a spatula. Cook for 1 more minute, then flip and cook for 1-2 minutes. Reduce the heat if needed to prevent burning.
  7. Cook this way until all the sandwiches have been cooked until melted and golden.
