Sausage and egg breakfast salad with maple dijon vinaigrette is a protein packed start to the day. This meal is a great lunch and is easily adaptable to your personal preferences.
Where are my fellow Bravo lovers out there?
I am certain we can all agree that the Real Housewife franchises have all gone downhill a bit.
Real Housewives of Salt Lake City is the only series I ride or die for anymore. They consistently bring it!
The only other shows I loved were Vanderpump Rules (RIP) and Southern Charm.
Madison from Southern Charm has become one of my favorite Bravo-lebrities.
She is seriously fit and also hilarious.
All you people who don’t watch Bravo are like “Get to the point, Stef!”
Madison posts these really healthy and balanced breakfast salads.
(See? there is the point to talking about Bravo nonsense).
The breakfast salads are based around one or two eggs and a link of sausage.
Breakfast salads can be flexible and built around the type of eggs and sausage you like.
If you like spicy sausage or veggie/vegan sausage, use that. When it comes to eggs, you can do scrambled, fried, poached, boiled, or soft-boiled. Pick your poison.
Here is what I threw into my version of the sausage and egg breakfast salad:
- Smoked Andouille Chicken Sausage
- A 6-minute, Jammy Egg
- Baby Spinach
- Arugula
- Tomatoes
- Avocado
- Cucumber
- Pickled Red Onions
All of those ingredients are interchangeable or replaceable based on your preferences.
The salad dressing is simple whisked together before serving.
The vinaigrette is a really easy combination of:
- Maple Syrup
- Dijon Mustard
- Lemon Juice
- Apple Cider Vinegar
- Extra-Virgin Olive Oil
- Salt and Pepper
I have the measurements for the vinaigrette below but I normally like more acidity than oil in my own dressing. The recipe is also for one salad and can be easily doubled.
Feel free to adjust the dressing according to your tastes as well.
Toss your greens and veggies with the vinaigrette. Top with veggies, egg, and sausage. Add some hot sauce for a kick!

The days when I eat this for breakfast I feel satisfied and fueled up for the day ahead.

Sausage and Egg Breakfast Salad
A protein packed breakfast salad with sausage, egg, baby greens, tomato, cucumber, avocado, and pickled red onion all tossed together in a maple dijon vinaigrette.
Ingredients
- 1 large egg, cooked any way you like it
- 1 sausage link, turkey or chicken
- big handful of baby arugula
- big handful of baby spinach
- 1/2 an avocado, cubed
- 1/2 cup cherry or grape tomatoes
- 1 tbsp pickled red onions
- 8 slices of cucumber
- for the vinaigrette:
- 2 tbsp extra-virgin olive oil
- 1 1/2 tsp apple cider vinegar
- 1 1/2 tsp maple syrup
- 1/2 tsp lemon juice
- 1 tsp dijon mustard
- pinch of salt and pepper
Instructions
- Add a tbsp of oil to a small pan. Heat over medium/low. Slice the sausage link into bite-sized slices. Add to the hot pan and cook for about 5 minutes or so until slightly browned. Transfer to a plate off tot he side. Add a little drizzle of oil to the pan. Cook your egg how ever you like it in the same pan.
- While the egg is cooking, mix your vinaigrette in a small bowl. Keep off to the side.
- Once the egg is cooked, transfer to plate with sausage.
- Add greens to a bowl. Toss with vinaigrette. Top with veggies. Mix to coat. Top the salad with egg and sausage along with a little hot sauce and salt and pepper if you desire.
Notes
You can have two links of sausage or two eggs in this salad. Eggs can be poached, fried, boiled, scrambled, or soft-boiled.
