Lemon and chive avocado toast is a full of flavor, acid, and spice. Sourdough toast topped with avocado smashed with lemon juice and zest, pizza oil, crushed red pepper flakes, chives, and salt.
If you are still checking in on this little corner of the web, first of all, thank you. Secondly, you know that I eat the same thing for breakfast every single day.
What can I say? I am a creature of habit. If it isn’t broke, why fix it?
I eat a jammy egg and avocado toast for breakfast basically every day of the week.
For a very long time, I was a big fan of pickled red onions and everything but the bagel seasoning on my avocado toast.
Pickled red onions are clutch to have around for topping salads, tacos, chili, etc.
However, sometimes I do not have the patience to wait for them to be done pickling. I also lack the wherewithal to remember to make the ahead of actually needing them.
That pickle (pardon the pun), led me to my latest avocado toast obsession; lemon and chive avocado toast.
Trust me when I say that I tried a lot of varieties of avocado toast to land on this one as my favorite.
What you need for lemon and chive avocado toast:
- Sourdough Bread
- 1/2 a Ripe Avocado
- Juice and Zest from 1/4 a Lemon
- Fresh Chopped Chives, about 2-3
- Crushed Red Pepper Flakes
- Maldon Sea Salt
- Infused Olive Oil or Extra-Virgin Olive Oil
I randomly planted chives five years ago and still have a ton of chives that keep growing back in a pot in my yard. This time of year, it is a blessing!
Recently, I discovered Pizza Oil from Brightland. It is infused with oregano and chili flakes. It adds another depth of flavor.
You can use a glug of a good quality extra-virgin olive oil to finish off the toast too. I also recommend the oil in the jar of chili onion garlic crisp, if you have that on hand.
You guys know how avocado toast works, right?
Toast your sourdough. Smash the avocado on top of the toast, working in a good squeeze of the lemon juice.
Add the zest, chives, salt, and chili flakes.
Finish the toast with a good drizzle of oil.
The bright lemon, spicy chili oil, and the mellow chives combine with the smooth avocado to make a flavor explosion in each bite.
It’s a simple toast with a lot of complex flavors.
You’re going to see why the combo is my new fave. Enjoy!
