As this weekend comes to a close, I hope everybody accomplished all they set out to do.
I hope that you made your Sunday count. I hope you finished some grocery shopping, maybe had a lovely brunch outing with some friends, did some cleaning, and maybe a load or two of laundry.
Or….If you are anything like me, and still have another day to your weekend…
I hope you have not yet showered. (NO SHOWER SUNDAY!!! Really fun to chant through your house.) I hope you are still in your mismatched sweatpants/pajamas, sitting on your couch, making your husband watch the Sex and the City movie on TNT, while you get ready to eat these bad boys from A Cozy Kitchen for your brunch.
1 Stick of Butter, frozen or really really cold
1 Log of Sharp Cheddar Cheese
A Drizzle of Olive Oil
Salt and Pepper
Scrub the potatoes clean under cold running water.
Thinly slice the cheddar and butter.
Make slices along the potatoes, about ¾ of the way down. Be sure not to cut all the way through.
Then insert alternating pieces of butter and cheese into the potatoes crevices.
Place potatoes into a Pyrex dish. Drizzle with olive oil and season with a dash of salt and pepper. Bake at 400 degrees for an hour.
After an hour remove the potatoes, and add more cheese to the tops of the potatoes.
Place potatoes back in the oven for another 15 minutes. Remove potatoes from oven. Transfer them to a dish to cool for about 5-10 minutes.
When cooled, top with a dollop of sour cream and a little bit of fresh chopped parsley.
Be a little creative with this dish. I like to insert fresh slices of avocado into some of the crevices.
Then I like to top it with some salsa, sour cream, and fresh chopped cilantro.
This is a very impressive potato. Too bad its maker is not looking as impressive….
Maybe it is time “NO SHOWER SUNDAY” came to an end…
