Creamy Red Onion Vinaigrette

Creamy red onion vinaigrette is an easy fridge staple to add to house salads throughout the week. Creamy red onion vinaigrette is slightly sweet, herby, and Greek yogurt based.

Let’s play a game. It’s called “What is More Annoying?” with Stefanie, the master of finding annoyances in everything, as your host! Ready to play? The rule is you have to choose one or the other. It is like the daily annoyance version of “Would you rather…?” There is no in between.

Ok, first up: putting laundry away OR folding laundry?

Tough, right? For me they are both annoying mainly because I am one single solitary person that is in charge of laundry for 2 children and 2 adults. It ALL sucks. I do have to say that, given the rules, I choose putting away laundry. Once it is folded, in my book, it’s done. I have left clean laundry on the dryer for weeks at a time and just picked off what I needed.

I am sure the neighbors love catching a glimpse of me streaking down the stairs to retrieve clean clothes.

Second choice: cooking dinner or cleaning up dinner?

Hands down, cleaning up. That was easy for me. Luckily, the thought of waking up to a sink full of dirty dishes annoys me waaaaay more so it makes me get the dishes done. Most of the time.

Vacuuming or dusting?

I actually don’t mind either. “Probably because you rarely do them,” snarks a voice in the back of my imagination that sounds a lot like my mom. I guess I choose dusting. It is my most often overlooked household chore.

Can you tell I spent most of the day yesterday doing laundry and cleaning? Life is awesome.

Alright, last one. Making a salad from scratch or making a dressing from scratch?

I know my answer right away. Making a salad! Ugh! Why does there have to be so much chopping and washing and chopping and slicing? My go to salad is usually fresh spinach and sliced avocado because it is two things and it’s easy. It is boring though and it really doesn’t utilize all the vegetables I am normally trying to get rid of before they go bad.

But, I can whip up a decent sauce or creamy red onion vinaigrette salad dressing like nothing.

Creamy Red Onion Vinaigrette

Creamy and lightly pickled red onion vinaigrette.

Servings 3 /4 cup

Ingredients

  • 1 Tablespoon Minced Red Onion
  • 1 Tablespoon plus 1/4 Teaspoon Red Wine Vinegar
  • 1 Clove of Garlic grated
  • 1/4 Teaspoon Grated Fresh Ginger
  • 1/2 Teaspoon Honey
  • 1/4 Teaspoon Dried Oregano
  • 1 Tablespoon 0% Fat Plain Greek Yogurt
  • 1 Teaspoon Minced Fresh Basil
  • 1/2 Cup Light Olive Oil
  • Salt and Freshly Cracked Black Pepper to taste

Instructions

  1. Add the minced red onion and red wine vinegar to a small mixing bowl. Let it sit for a few minutes to slightly pickle the red onions.
  2. Add the rest of the ingredients except for the olive oil.
  3. Whisk the ingredients to incorporate the honey. Keep whisking and stream in the olive oil until a nice creamy and combined consistency.
  4. Add salt and pepper, adjust to taste.
  5. Store in an airtight container in the fridge. Dressing only lasts for a few days. Let the dressing come to room temperature and whisk to combine before serving.
