Rosemary Garlic Butter Grilled Steaks

Rosemary garlic butter grilled steaks are the perfect end of summer meal. Steaks smothered in fresh rosemary and garlic butter simply seared.

If you couldn’t tell from following me on Instagram, the past three weekends have been a bit hectic. It seems I have been feeling like I need to squeeze every last ounce of “Me Time” out of summer before school starts and it becomes all about the kids or Mike and his school/football schedule. Do you blame me, though?

First, I was in Milwaukee courtesy of the lovely Visit Milwaukee folks, with Ashleigh and Melissa. We did all the walking and all the beer drinking we possibly could. I came home for a few nights, packed up, and was gone again.

Then this past weekend, I was crashing my parents’ lovely vacay stay in Arizona. I got to check out my in-laws’ new home in Sun City and then check out some cool new (to me, at least) places in Scottsdale that the Experience Scottsdale people recommended.

As much as I missed my little baby boys, it was hard to leave and come back home. Don’t judge me.

I am now back to the laundry, cooking, cleaning and getting ready for school that I put off for the past three weeks. This is it. No avoiding it now. Summer is over!

Waaaaahhhhhhh!

All I can do is savor the last weekend before the ish really hits the fan.

What a good way to say bye bye to summer than with an epic BBQ. I used up some beautiful nectarines and made a version of this panzanella. I then just simply grilled some asparagus with a little lemon, salt and pepper.

Lucky for me, I also had some mashed potatoes (with a little cauliflower snuck into it) stowed away in the freezer.

Before Mike complained about too many vegetable based dishes, I busted out a pair of beautiful filets my parents gave to us that I had been saving for just the right time.

The thing about these steaks though, is that they are basted with melted butter, fresh rosemary and a smashed garlic clove while they cook. It is the perfect way to impart a little garlic without offending your dinner mate.

Rosemary garlic butter grilled steaks are so easy even Mike could make it! But I won’t let that happen. Bad enough he was solo parenting through all my end of summer wanderlust.

Back to reality, which isn’t too bad because of rosemary garlic butter grilled steaks!

Rosemary Garlic Butter Grilled Steaks

Yield: 2 steaks
Prep Time: 5 minutes
Cook Time: 10 minutes
Rest Time: 5 minutes
Total Time: 20 minutes

Simply grilled steaks bathed in melted butter, fresh rosemary and a smashed garlic clove.

Ingredients

  • 2, 1/4 lb filet mignon steaks
  • good pinch of sea salt and freshly cracked black pepper
  • 4 tbsp unsalted butter, melted
  • 1 tsp chopped fresh rosemary
  • 1 garlic clove, peeled and smashed

Instructions

  1. Preheat your grill with all burners set to high for at least 5-10 minutes. Clean and oil down the middle grates.
  2. Let the steaks come to room temperature before grilling. This makes for a more evenly cooked steak.
  3. Mix the chopped rosemary, butter and smashed garlic clove together in a small mixing bowl. Break the garlic clove in half. One half for each steak you're grilling.
  4. Pat each steak dry with paper towels. Season each side liberally with salt and pepper.
  5. Place the steaks on the hot grill. Sear on the first side for about 4 minutes, until the meat is naturally released from the grate.
  6. Flip the steak and use a brush to bathe the steaks in the melted rosemary butter. Top each steak with garlic clove half. Leave thew lid open and add more butter if needed. After about 3 minutes, return the garlic to the butter bowl and flip the steaks, making sure to turn the steak a quarter turn to get good cross marks.
  7. Lather this side in rosemary garlic butter and then top with garlic half. Grill for another 2 minutes. If you want a more well done steak, grill for about 3-4 minutes on this side as opposed to 2.
  8. Once the steaks have been grilled for about 10 minutes total, remove from grill, transfer to a plate, tent loosely with foil and allow to rest for 5 minutes.
  9. Top each steak with a little more pepper and fresh chopped rosemary for garnish. Slice and serve!
