Grilled BBQ Bacon Beer Brats

Grilled BBQ bacon beer brats are definitely unique! Beer boiled brats wrapped in bacon, slathered in chipotle bbq sauce and then grilled until the bacon gets slightly crisp.

When it comes to bacon, I think you are either of one of two teams; team crispy or team floppy. I am 100% team crispy—the crispier, the better. I know quite a few people that are team floppy though. Both sides sit back and wonder to themselves what the other side sees in that kind of bacon.

I know I do.

How can you garnish a bloody Mary with floppy bacon? Or what about that fatty, stretchy texture? I am at a loss for an explanation. Team floppy bacon, stand up for yourselves and explain it to me!

My last recipe was a grilling recipe for steak, and today, I am continuing the trend with these grilled BBQ bacon beer brats. I intend to be outdoors grilling well into October as long as weather permits. So, get ready for a slew of summer themed BBQ friendly recipes in the next two weeks.

The brats start out slow boiled in a good IPA to soak up all that beer flavor. I then wrap them in bacon and secure with toothpicks. On top of that, a good chipotle bbq sauce slathering!

The end result is sweet, hoppy, and spicy!

I will say grilled bbq bacon beer brats are sort of a mess on the grill, but a mess that is well worth it in the end.

Also, to circle back to the bacon debate: the bacon on the grilled BBQ bacon beer brats doesn’t get very very crispy. It gets a good char and is definitely cooked through completely.

Honestly, I think it is a best of both worlds situation. Not too floppy so the crispy people complain and not too crunchy so the floppers don’t flip out.

Grilled BBQ Bacon Beer Brats

Yield: 2-5 people/ 5 brats
Prep Time: 30 minutes
Cook Time: 10 minutes
Additional Time: 5 minutes
Total Time: 45 minutes

Brats boiled in an IPA then wrapped in bacon, slathered with chipotle bbq sauce, and then grilled.

Ingredients

  • 5 bratwurst sausages, about 1.3lbs
  • 12oz fave IPA (or whatever beer you like)
  • 3 bacon slices, cut in half
  • 1/2 cup chipotle bbq sauce
  • 5 potato brat buns
  • shredded cheddar cheese for topping (optional)

Instructions

  1. Add the brats and the IPA to a large pan. Bring to a boil over medium heat. Cover with a lid and let simmer for 30 minutes. Check occasionally to make sure the beer doesn't boil over.
  2. Remove the brats from the cooking liquid. Transfer brats to a plate. Discard the IPA.
  3. When you are ready to grill, take each bacon half slice and wrap it around each brat. Secure each end with a wooden toothpick. Use a pastry brush to brush each bacon wrapped brat with bbq sauce liberally.
  4. Preheat each burner of the grill to medium for about 10 minutes. Brush the grates with a little olive oil or spray nonstick cooking spray right before grilling.
  5. Add brats to the hot grill and cook for about 3-5 minutes per side turning every so often. Use a pastry brush to brush on more bbq sauce in between each turn as well. After about 10-12 minutes the bacon should be grilled enough to be cooked through and slightly crispy.
  6. Use tongs to remove the brats from the grill. Carefully remove the toothpicks and then place the brats on the buns. Top with shredded cheese and more bbq sauce if desired.
