I have to start out stating that I feel foolish even talking or writing about food right now. My Instagram feed has basically come to a creeping halt with what is happening in the world.

I just want everybody out there to know that I think this is the time for us all to step up and do better. Start with yourselves, do the work. I may not be advertising what exactly I am doing with my own little family. Know that I am with you. I am listening.

This is definitely not a great introduction to meatballs, I know that.

But food is a source of comfort for a lot of people. That is why I will continue to share recipes here on the blog.

How to make Korean meatballs | Sarcastic Cooking

My brother the butcher gave me a lot of ground chuck/brisket blend when all this virus stuff started. I have been slowly working my way through the ground beef.

I made some walking taco casserole, patty melts, and of course bolognese.

We generally don’t eat a lot of beef in our house so I had to get crafty so I didn’t get bored too quickly.

Korean BBQ inspired meatballs are made with minimal ingredients and are baked in the oven. Just mix together the ground beef with bread crumbs, soy sauce, green onions, garlic, hot sauce, & sesame oil and bake until caramelized and cooked through.

I forgot how easy meatballs can be.

This is a great recipe if you’re getting bored with stir fry or fried rice… Not saying that was me, but it wasn’t not me.

Lastly, we are all in this together. (My boys have been very into High School Musical lately, what can I say?) Or maybe better, it’s on all of us, together, whether that be climate change, the Coronavirus, or systemic racism. Practice kindness and know I am here for you.
