Guys! It has been a few crazy weeks here, but we all made it to winter break. Let’s all breathe a sigh of relief. Unless you are one of those procrastinators and have all your shopping to do still. Then I wish you good luck. Enjoy that stress for a little longer.

I shouldn’t talk, really. Andy threw us (I mean, Santa) for a loop this year. He was all for this Osmo coding game for the iPad. Then, the other day, faced with the joy and pressure of a phone call from Santa, he cannot stop talking about how he wants a Power Rangers Megazord.

Well, Santa might disappoint you this year kid. I feel strangely like Arnold in the smash holiday hit, Jingle all the Way (all you closeted old Conan fans will appreciate that reference). Online, this thing is almost $200 and will get here after Christmas.

I was panicking a little. Luckily, my mother-in-law is saving my (I mean, Santa’s) butt. She happens to have an out-of-box one she found for little prince Andy a while ago. Pheew!

To help that no-stress-I-got-this-all-under-control feeling going, let’s talk about the easiest holiday appetizer around: citrus marinated feta and olives.

Christmas Eve or Christmas Day even, bring some olive oil, garlic, crushed red pepper flakes and citrus peel to a simmer. Let it completely cool and then add it to a jar or bowl with olives and feta. Let it sit out at room temperature for an hour, and voila!

Don’t like feta? Skip it! This recipe is a riff on a What’s Gaby Cooking recipe from her book. She makes it just for olives. It is perfection either way, honestly.

Citrus Marinated Feta and Olives

Yield: about 2 1/2 cups
Prep Time: 5 minutes
Cook Time: 15 minutes
Marinating Time: 1 hour
Total Time: 1 hour 20 minutes

Feta and olives marinated in olive oil infused with lemon and orange along with garlic, herbs and crushed red pepper.

Ingredients

  • 1 1/2 cups extra-virgin olive oil
  • 2 garlic cloves, peeled and smashed
  • 3 sprigs of fresh thyme
  • 1/2 tsp crushed red pepper flakes
  • zest from 1 lemon
  • zest from 1/2 an orange
  • 1 1/2 cups pitted olives
  • 8oz block of feta cheese, cut into cubes

Instructions

  1. Add the olive oil, garlic, and crushed red pepper to a pot over a medium flame. Once simmering, reduce heat to the lowest setting.
  2. Add the thyme and zests.
