Cheddar scallion waffles in the perfect 5-6 quantity batch. Perfect for a weekend breakfast or a weeknight breakfast for dinner situation. Top them with a fried egg or fried chicken and some hot honey. You will be set!

I just realized I have 28 days until my family leaves for summer vacation to the center of the earth (aka Florida) in June. that means I have 28 days to basically plan and create all my content for the summer.

Let’s be honest. When we get back from vacation, it is going to be about a week or two of staring at luggage plus or minus 4 days before I go grocery shopping and write a post about “how hard it is to get back into the swing of things after a vacation.” 

You guys know the routine.

That is why I need to get this stuff done now, before we leave. Both kids are still in school so this is the perfect time to hunker down and make it look like I am casually creating grilling recipes a month from now when, in reality, I am working under pressure.

First thing on my recipes-to-create-list, after those walking tacos from Tuesday, was these cheddar scallion waffles from Dinner Just for Two. I like small batch waffles because I just can’t deal with standing at the waffle maker making 12-24 waffles. It’s like I am staring down the future random block of frozen tin foil in the back of my freezer. We can’t eat them all and that is where they are heading.

I also scored this mega awesome Wisconsin cheddar from Eataly over Mother’s Day weekend and I knew this was her forever home. I had to sneak and add the cheese to waffles when Andy, the cheese monster, wasn’t looking. He likes to enjoy fine cheeses with crackers and bubble water.

Am I raising a cheese snob? Maybe.

The secret to these small batch wonder waffles is the whipped egg whites. You mix all the ingredients together and then gently fold the egg whites into the batter. It is worth the extra arm work.

I got six square waffles out of my waffle maker. I topped them with fried eggs and a little homemade hot Sriracha honey. It was the perfect combo!

Cheddar Scallion Waffles

Yield: 5-6 waffles

Total Time: 30 minutes

Fluffy, small batch cheddar scallion waffles are perfect for dinner or breakfast topped with a fried egg, chicken, or just some hot honey.

Ingredients

  • 1 cup all-purpose flour
  • 1/4 tsp baking soda
  • 1/2 tsp baking powder
  • 3/4 tsp salt
  • 1tbsp sugar
  • 2 large eggs
  • 1 cup buttermilk
  • 2 tbsp unsalted butter, melted
  • 3oz (1 cup) shredded cheddar cheese
  • 3 scallions, sliced
  • FOR THE HOT HONEY:
  • 1 tsp Sriracha
  • 2 tbsp honey

Instructions

  1. Preheat your waffle iron.
  2. In a large mixing bowl, whisk together the flour, baking soda, baking powder, salt, and sugar.
  3. Separate the eggs. Add the whites to a small mixing bowl or the bowl of an electric stand mixer fitted with the whisk attachment.
  4. In a separate medium, mixing bowl, whisk together the egg yolks, buttermilk, butter, cheese, and onions.
  5. Either use an electric hand mixer or the stand mixer to whip the egg whites until stiff peaks form.
  6. Add the wet ingredients into the dry. Fold to combine. Once, no flour is visible, stop.
  7. Fold the egg whites, 1/3 at a time, into the batter.
  8. Add about 1/2 cup of batter to each waffle well. Cook until deeply golden brown. repeat with remaining batter until all batter is used.
  9. In a small bowl, use a form to mix the Sriracha and honey together to make the hot honey.

Notes

These waffles would also go great with fried chicken or eggs of any kind.
